Prepare and marinate the shrimp
After buying the shrimp, remove the heads, peel the shells, wash them clean, and then dice them, leaving 4 shrimp for decoration.
Next, put the shrimp in a bowl, add 1/2 teaspoon of monosodium glutamate, 1/4 teaspoon of salt, 1/2 teaspoon of sugar, and 1 minced shallot, mix well, and marinate for about 15 minutes.

Prepare the other ingredients
Soak the dried wood ear mushrooms in water for about 2 hours to let them expand, then chop them finely. Peel the carrot, wash it clean, shred it, and then chop it into small pieces.
Next, crack 2 eggs into a bowl, beat them, then add 1/4 teaspoon of salt and strain through a sieve for a smoother egg mixture.
