Prepare the ingredients
Clean the chicken, rub salt on the body of the chicken for about 8 minutes to reduce the smell, then rinse thoroughly with water and let it drain.
Peel the shallots, cut each shallot in half. Peel the ginger and slice it thinly. Trim the roots of the green onions, wash them thoroughly, and chop them finely.
After picking the mushrooms, wash each mushroom, cut them into small pieces, and soak them in dilute salt water for a few minutes. Then rinse them clean and let them drain.
-
Boil the chicken
Add 3 liters of water, 3 shallots along with the cleaned chicken, 1 tablespoon of seasoning, 1 teaspoon of salt, and sliced ginger into a pot. Cover and cook over high heat until the water boils, then reduce the heat to low and boil for about 15 minutes until the chicken is cooked.
Turn off the heat and soak the chicken in the chicken broth for about 15 minutes for the broth to soak evenly into the chicken, then remove the chicken.
Tip: To prevent the chicken skin from tearing during boiling, you should briefly dip the chicken in warm water before boiling to let the chicken adjust to the temperature! -
Roasting rice and cooking porridge
Rinse the rice about 3 times with clean water, then put it in a pan, roast evenly over medium heat until the rice in the pan is slightly dry and golden, then turn off the heat.
Next, remove the shallots and ginger from the chicken broth, add the roasted rice to the chicken broth and cook over low heat for about 20 minutes until the rice is soft.
-
Shredding chicken and stir-frying mushrooms
After boiling the chicken, remove it and shred the chicken into small bite-sized pieces.
Add 1 tablespoon of cooking oil to the pan, wait until the oil is hot, then add the chopped scallions, and sauté until fragrant.
When the scallions are aromatic, add the mushrooms and 1 teaspoon of salt, stir-fry for about 2 minutes over high heat until the mushrooms are cooked, then turn off the heat.
-
Completion
After the porridge is cooked, add in the stir-fried mushrooms, shredded chicken, and 1 teaspoon of sugar, gently press down to submerge in the water.
Cook for another 2 minutes, taste and adjust the seasoning to your liking, then add in the chopped green onion, stir well and turn off the heat.
Scoop the chicken porridge into a bowl, sprinkle with 1/2 teaspoon of ground pepper and a small sprig of coriander on top, and it’s ready to enjoy.
-
Final Product
The chicken mushroom porridge after completion will have an attractive aroma and flavor. The porridge is soft, mildly sweet, and well-balanced with the taste of the mushrooms and chicken broth. This will be a great choice to cook for the family on the first rainy days!

How to choose fresh and delicious morel mushrooms
- You should choose to buy wild morel mushrooms when preparing dishes as they will be more fragrant and delicious than organic cultivated morel mushrooms.
- Choose mushrooms that are large and long like fingers; those that are still buds will retain their crispness better than those that have bloomed.
- Morel mushrooms only appear once a year and last for a month after the first rains of the season until the beginning of the sixth lunar month, so this will be the best time for mushrooms.
- When buying organic morel mushrooms, you should pay attention to choosing mushrooms of moderate size, with dark brown caps, and a firm feel when touched.
- Do not buy mushrooms that are crushed, have a distinctive smell, or have strange odors.
How to choose fresh chicken
- Choose those with a pink-red color, with no bruising or dark spots on the skin. Avoid buying chickens with dark, dull skin as they are chickens that died before being processed.
- When buying local chicken, you should choose those with a slender body, light yellow skin, thin, smooth, with high elasticity, and darker yellow only in certain areas like the breast, wings, and back.
- Press on the thighs or breasts to check if the chicken has been injected with water. If you find the chicken mushy, slippery, or deformed, do not buy it.
- When buying frozen chicken, you need to check the reputable source, origin, and expiration date on the packaging to ensure product quality and safety.
How to properly prepare chicken
- To clean the chicken, first, you need to pluck out the coarse, dark hairs on the chicken’s skin, cut off the fat glands, and wash away any blood clots inside the chicken’s body.
- Then use smashed ginger and a little white wine to rub on the chicken for about 10 minutes, then rinse well with water.
- Additionally, you can wash the chicken in diluted salt water and then rinse it under cold running water to remove stubborn dirt on the chicken’s surface.
So with just a few simple steps, you already have 2 ways to cook chicken porridge with mushroom that are delicious and flavorful. Quickly get into the kitchen to showcase your skills and treat the family right away!
