- Choose mushrooms that have bright colors, a characteristic mushroom smell, uniform size, black or gray mushrooms will be tastier than white mushrooms.
- Good straw mushrooms are those that are still in bud, round or cylindrical in shape, intact, not bruised, and feel slightly firm when gently squeezed.
- Avoid buying mushrooms that are discolored, have a foul smell, or feel soft and mushy to the touch.
How to choose fresh carrots
- Fresh and delicious carrots are those with a deep, bright orange color, green leaves still fresh and firmly attached to the root, straight and elongated shape towards the tail, smooth skin, feel firm and slightly hard.
- Do not choose carrots with wilted, bruised tops, or those that are slimy, have dark spots, and feel soft when pressed.

How to make straw mushroom porridge

Prepare the ingredients
Soak the rice in cold water for about 30 minutes, then drain.
Wash the green onions and coriander, drain, and chop finely.
Peel the carrots, wash them thoroughly with water, drain, and then dice.
Trim the stems and bruised parts of the straw mushrooms, wash them clean and soak in diluted salt water for 30 minutes. Then, drain in a basket, rinse again to clean, drain, and cut in half.

Stir-fry ingredients
Place a pan on the stove, turn the heat to medium, and add 3 teaspoons of cooking oil to the pan. Wait for the oil to heat up, then add minced garlic and sauté until fragrant.
Next, add the carrots and stir-fry for about 2 minutes, then add the straw mushrooms and season the pan with 1 teaspoon of seasoning powder, 1 teaspoon of salt, 1 teaspoon of sugar, and 1 tablespoon of fish sauce. Continue to stir-fry for another 3 minutes before turning off the heat.

Prepare vegetables
You peel, wash the potatoes and carrots, then dice both ingredients. Wash the cilantro.
Cut the roots off the straw mushrooms, soak them in diluted salt water for 15 minutes, then gently squeeze to remove all dirt, rinse with clean water 2 – 3 more times, then drain and dice.

Marinate minced meat
You put the minced meat in a bowl with a little salt, pepper, seasoning powder, and monosodium glutamate, then mix well and marinate for 15 minutes to let the meat absorb the spices evenly.

Sauté vegetables
You heat a pan on the stove with 1 tablespoon of cooking oil, when the oil is hot, add the potatoes and carrots and sauté for 2 – 3 minutes so that the vegetables are cooked but not too soft.

Cook the porridge
You put 1 cup of rice into the rice cooker with 400ml of water, then press the “COOK” button and cook for 10 minutes until the rice is done.
