How to choose fresh and delicious snakehead fish
- Fresh snakehead fish should be intact, with no scratches or blood spots on the skin, and no unusual spots on the body.

How to prepare Dried Snakehead Fish

Prepare the fish (wash, remove fishy smell)
Since the dried snakehead fish will be made whole, wash 2kg of snakehead fish thoroughly, using a knife to cut off the fins and remove all the fish’s internal organs.
Rinse the fish really well to remove all the blood, then let it drain.

Make the marinade
Prepare a bowl with 1 liter of water, then gradually add 2 tablespoons of salt, 1 tablespoon of monosodium glutamate (can be replaced with seasoning powder), 1 teaspoon of pepper, and 4 – 5 tablespoons of fish sauce.
Stir well until the seasonings dissolve; at this point, the water is still clean so you can adjust the marinade to your desired saltiness.

Marinate the fish
Place the fish in the marinade bowl, and put the bowl in the refrigerator overnight for the fish to soak up the flavors.
Note: Make sure the marinade covers the fish completely so that the fish absorbs the seasoning evenly! -
Drying the fish
After leaving the fish overnight, discard the marinade and let the fish drain.
Arrange the fish on a tray or bamboo mat and dry it in the sun for one day.
