Ingredients for Peach Orange Lemongrass Ice Cream For 2 people

How to choose sweet and delicious peaches:
- The ideal size for delicious peaches is about the size of a teacup, round and has a diameter of 3 – 5cm.
- The skin of the peach has soft fine hairs. Therefore, when processing, you need to wash it thoroughly several times to remove some of the fine hairs.
- When ripe, peaches have a deep yellow and red color.
- When held, they feel firm, and when gently pressed, they should not be soft.
- When tasted, fresh peaches are crunchy, juicy, and have a light sweet and sour taste. For ripe peaches, the flesh will be yellow, smooth, with a more pronounced sweet and sour flavor.
- Peaches that are not soaked in chemicals usually can only be stored for about 1 week. In contrast, chemically soaked peaches can be stored for up to 1 month.
How to choose delicious cashew nuts:
- Color: Choose cashew nuts that are bright yellow. Avoid dark or deep brown nuts as these are often old, damp, and may have worms inside. You can check by peeling a few nuts.
- Shape: Choose nuts that look intact, have uniform size, with full, round, and naturally plump ends. Avoid buying nuts that are cracked or scratched.
- Taste: Delicious cashew nuts will have a fragrant, rich flavor, with a noticeable sweetness that is not too strong and a distinct creamy taste.
How to make Peach Tea Ice Cream

Prepare the ingredients
Soak 150g of raw cashews overnight. Next, put the cashews in a pot with a little water and cook for 10 minutes, then drain.
Wash the peaches, peel them, and remove the pits. Divide into 2 parts: one part 600g for cooking with sugar, the other part 100g diced.

Cook the peaches
Add 600g of prepared peach flesh, 30g of sugar, 10ml of orange juice, and 1 tablespoon of cornstarch into a pot. Then use a spoon to stir well, lightly crush the peaches, and cook on low heat for 10 minutes.

Blend the mixture
Open the filter bag of peach tea to take out the tea inside.
Grate about 1 teaspoon of orange peel.
Wash the lemongrass, cut into small pieces about 2cm long.
Add to the blender 150g of cooked cashew nuts, 200ml of thick coconut milk, cut lemongrass, 1 teaspoon of grated orange peel, peach tea powder, and 600g of peaches that have been cooked with sugar. Blend until the mixture is smooth.

Freeze the ice cream
Add 100g of diced peaches to the mixture, then pour it into a container, cover it tightly and freeze for 6 – 8 hours.

Final Product
The peach tea coconut cream has a light yellow color, sweet flavor, and rich creaminess from the coconut milk blended with soft, delicious peach pieces. If you pay close attention, you will also notice the faint aroma and distinctive taste of peach tea and lemongrass!
