Marinate the fish
Put the snakehead fish in the mortar, add 1 teaspoon of salt, 1 tablespoon of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 2 minced shallots, and 3 minced garlic cloves. Mix well to absorb the spices.

Pound and knead the fish
Continue using the pestle to pound the fish so that the spices blend together and help the fish become firmer. To achieve a firmer texture, it’s best to pound evenly for about 15 minutes until you lift the pestle and feel the fish is sticky, chewy, and heavy in your hands.

Frying Fish
Heat the pan and add 150ml of cooking oil until it bubbles, take each small piece of fish, roll it into a ball, and then flatten it to about 1/2 finger thickness. Fry until golden brown on both sides, about 5 – 7 minutes per side.
Tip: To ensure the fish cake is evenly cooked and has a chewy texture, the amount of oil used for frying should just cover the fish!
Depending on the size of the pan, you should only fry 2 – 3 small pieces of fish at a time because after about 5 minutes of frying, the fish will puff up significantly.
