- Choose leaves that are not torn, have a bright green color, the stems are green and white, and when held, they do not droop. When eaten, they will have the natural sweetness of the vegetables.
- Avoid buying mustard greens with slightly yellowing leaves, wilting, soft to the touch, or with black spots, as they will not taste good.
How to choose fresh river shrimp, not spoiled
- It is advisable to choose live ones that jump around, with a naturally curved back and slightly folded tail.
- Avoid selecting those that are pale in color, have a bloated belly, and feel mushy when picked up as they may have been soaked in chemicals.
How to prepare Sweet Cabbage Soup with River Shrimp

Prepare the ingredients
After purchasing sweet cabbage, remove the roots and yellow leaves, then cut into bite-sized pieces about 1 – 2 finger lengths, and wash several times with water and drain.
Cut off the head and tail of the shrimp, wash thoroughly several times with water and let drain.
Green onions and cilantro should be trimmed at the roots, wilted leaves removed, then washed with water and cut into bite-sized pieces.
Shallots should have their skins removed, rinsed briefly with water and minced.

Marinate the shrimp
Put the shrimp into a small bowl, add the following seasonings for marination: 1/2 teaspoon of MSG, 1/2 tablespoon of fish sauce, 1/2 teaspoon of ground pepper, 2 teaspoons of salt, 2 teaspoons of seasoning powder, and minced shallots, then mix well and let it sit for about 5 minutes for the shrimp to absorb the flavors.

Cook the soup
Place a pot on the stove, add 2 tablespoons of cooking oil and heat over medium heat, wait for the oil to boil, then add the marinated shrimp, stir-fry until the shrimp is cooked and fragrant, then add about 1 liter of water and boil over high heat. When the water boils, add the sweet mustard greens.
When the water boils again, add 1 teaspoon of seasoning powder, 1 teaspoon of salt, then adjust the seasoning to suit your family’s taste, add green onions, and coriander, then turn off the heat.
