How to choose fresh and quality pork
- You should choose pork that is bright pink, has no strange smell, with clear white fat, and avoid meat that is pale and has a foul odor.
- You can press the meat with your hand; if you observe that the meat bounces back immediately, does not leave a dent, is dry and does not stick to your hand, it indicates that this is good quality meat.
- Good pork should have even, firm fibers and not leak juices or feel slimy.
- When buying meat, you should ask the seller to cut the meat along the grain and avoid selecting meat with small white lumps interspersed among the muscles, as it may indicate that the meat is infected with cysts, which can adversely affect your health when consumed.

- You should choose live shrimp, with slightly curved bodies, firm flesh, still active, shiny and smooth shells, the head must be tightly attached to the body, and the shrimp legs must be firmly attached and intact.

Prepare and boil the pork
Boil about 1.2 liters of water until small bubbles rise, then add ginger, 15g of smashed shallots, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1 tablespoon of vinegar, and mix well. Wait for the water to boil and then put the pork in to boil.
How to clean pork effectively, without smell
- Do not leave the pork in the plastic bag for too long; instead, use salt to rub all over the piece of meat, rubbing and kneading it, then rinse thoroughly with water.
- Boiling with ginger helps effectively eliminate the smell, but be careful not to add too much to avoid making the broth taste bitter.
- While boiling, regularly skim off the foam to completely remove the unpleasant smell of the meat!
When the meat is cooked, take it out and immediately place it in a bowl of cold water, wait for it to cool, then rinse it thoroughly and cut it into bite-sized pieces.
Tip: You can use chopsticks to poke through the piece of meat; if it goes through easily and the meat is white without a pink hue, it is done.
Pork bones should be soaked in hot water at about 60 degrees Celsius with 1 tablespoon of salt and 1 tablespoon of vinegar for 5 minutes. Rinse with clean water.
Place another pot of water on the stove, about 3 liters, add onion, 1 tablespoon of salt, 1 tablespoon of sugar, and add all the bones to simmer for 4 hours.

Prepare and Boil Shrimp
For the shrimp you bought, remove the head, then peel off the shell completely.
Next, use the tip of a knife to make a cut along the back of the shrimp to expose the shrimp vein.
Then gently use a toothpick to remove the shrimp vein.
Note:
- You should only cut enough to see the shrimp vein; the shrimp meat should still stick together.
- You can wash the shrimp with a little diluted saltwater to ensure its fishy smell disappears.
After that, put the shrimp into the pot of previously boiled water, and boil for about 2 minutes before removing it.

Prepare Other Ingredients
Wash the fresh herbs and let them drain. Cut the chives into short pieces about 5cm. Slice the cucumber into thin strips.
Other vegetables should be cut into halves or thirds for easy eating.
Add a little boiling water to 10g of tamarind, mash gently to extract the tamarind juice. Use a strainer to filter the juice.

Make the sauce
Add 2 tablespoons of cooking oil to the pot, stir-fry 10g of minced shallots until fragrant. Take 2 tablespoons of soybeans, 1 tablespoon of sugar, 2 tablespoons of pho sauce, and stir well with a spoon until dissolved.
Add 1 tablespoon of satay, 60ml of water, and stir continuously until thickened. Adjust seasoning to taste.

Cook the broth
Strain the shrimp, meat, and bone broth from before, discard the residue, and keep the clear water.
Add 1 tablespoon of chicken seasoning powder, 2 tablespoons of sauce, 1 tablespoon of oil from satay, tamarind juice, and stir well.
Note:
- Since the dish is served with sauce, the broth should be a little bland to avoid becoming salty when sauce is added.
- Do not add too much tamarind, as it may make the broth sour and lose the dish’s characteristic flavor.

Completion
Take a sufficient amount of noodles, blanch them directly in the boiling broth, place them in a bowl, and add all the ingredients on top. Add broth, a little satay, roasted peanuts, fried onions, and enjoy!

Tips for making bun goi
- To maintain the chewy and delicious texture of the rice noodles, it’s best to blanch the noodles just before eating.
- Since you have to blanch the noodles directly in the broth pot, you can divide the broth into smaller pots to avoid ruining the flavor of the whole pot.
- Since soy sauce is produced by different brands, the flavors can vary, so you should adjust the seasoning according to your family’s taste to perfect the broth!
