How to choose delicious new rice

  • You should choose types of rice with a natural fragrant smell, which you can immediately sense when eating. If you smell rice that is overly fragrant, it may have been treated with chemicals, which is an artificial scent not good for health.
  • New rice grains usually look firm, retain their white embryo, and have few yellow grains, with a natural white color. Pay close attention to unusually bright white rice grains, as they may have been chemically bleached.
  • The best way to get delicious new rice is to buy rice in season. Additionally, you can buy from reputable rice dealers and stores that are quality certified to ensure the safety for your family’s health.

How to make Rice Flour

  • Soak and grind the rice

    Rinse the rice thoroughly and then soak it in regular water for about 6 – 8 hours. After soaking, rinse the rice with water about 2 more times.

    Put about 1/2 cup of rinsed rice and 1/2 cup of clean water into the blender. Blend at the highest setting for 10 minutes until you achieve a smooth flour mixture, then turn it off. Blend the remaining rice in the same way until finished.

  • Strain the flour

    Place a sieve or cover a bowl with a piece of cheesecloth, then gradually pour the blended rice mixture into it.

    Use a spoon to press out the water and transfer the rice residue into another bowl.

  • Dry the flour

    Put the bowl of rice residue into an air fryer, drying at a temperature of 80 degrees Celsius for 10 minutes. Then, use a spoon to stir the flour evenly. Continue to dry and stir like this about 5 times until the flour is completely dry, which will allow it to be stored longer.

    Tip: If you don’t have an air fryer, you can spread the flour residue evenly on a tray and expose it to the sun for about 6 – 8 hours. Stir once every 2 hours to ensure the flour dries completely.

    After drying the flour, strain it through a sieve to make it fine. After the first strain, the remaining flour on the sieve should be put back into a blender to grind again. Blend for about 5 minutes at high speed, then turn off. After that, strain this flour again. Repeat these two steps until all the flour is used up.

  • Final Product

    The rice flour made with the blender is very smooth, dry, and has a light aroma of rice. You can use rice flour to make many delicious dishes such as: bánh đúc, bánh canh, phở,…

Tips for preserving rice flour

  • Put completely dried rice flour into a zip bag or glass jar, seal it tightly, and store it in a dry place away from sunlight. You can preserve that rice flour for about 1 – 2 months.
  • Using the freezing method, you can store the flour for about 5 – 6 months. It is not advisable to keep it for more than 1 year because by then the rice flour will have completely lost its nutrients.
