How to Choose Fresh Ingredients
How to Choose Fresh Pork
- Good pork should be dry, not slimy, with normal smell and color, solid meat, good elasticity, and when you press your finger into the meat, it leaves a dent but doesn’t leave a mark when you lift your finger away.
- Avoid choosing pieces of meat with yellow fat as it may indicate the pig has a pigment disease, or buy meat that is too lean and has a bright red color, as this may be pork injected with growth hormones.
- You can choose to buy whole pieces of pork and ask the seller to grind it for you or buy it home and grind it yourself using a meat grinder.
How to choose delicious soft tofu
- Good tofu usually has an ivory white color, is soft, has a light fragrant smell, and has the characteristic rich taste of soybeans.
- When buying, you should choose tofu that is carefully packaged and intact, while also checking the expiration date printed on the product packaging, its origin, and you should buy tofu that has a production date closest to your purchase date for better taste when cooking.
- Additionally, you can also make soft tofu at home, with a very simple recipe shared by TasteVN!
How to choose fresh and delicious oyster mushrooms
- Choose mushrooms with a firm stem, large cap, which can be gray or white (depending on the type) but should not be too torn; the tip of the mushroom is slightly concave and there are thin fibers underneath the cap.
- It’s best to choose oyster mushrooms that grow in clusters, are fresh, and have a characteristic mushroom smell.
- You can choose to buy brown oyster mushrooms or white oyster mushrooms according to your personal preference. However, for soups, you should choose white oyster mushrooms because they will be softer and sweeter. Brown oyster mushrooms are more suitable for stir-fried dishes.
How to choose fresh and delicious enoki mushrooms
- Choose fresh enoki mushrooms that are white, crisp, and shiny, with a firm cap, and stems that are not slimy or slightly brown.
- It is advisable to choose mushrooms that are still fresh, not bruised, with stems that are not separated or falling apart, and without any slimy liquid.
- When buying packaged mushrooms at supermarkets or large markets, you should carefully check the origin to avoid purchasing low-quality or expired mushrooms.
How to choose fresh and delicious chives
- Choose young, green chives with bright colors; they will snap easily when you break them with your hands.
- Avoid buying old chive leaves that are dark green as they are fibrous and will be tough and not tasty when eaten, or chives that have turned yellow and show signs of spoilage.
- To buy fresh and high-quality chives, you should purchase them from reputable grocery stores and supermarkets.
How to prepare Soft Tofu Mushroom Soup with Chives and Minced Meat
-
Prepare the ingredients
Peel off the outer layer of shallots, wash them clean, and then chop them finely with a knife.
Pick out any wilted or yellow leaves from the chives, wash them clean, and cut them into bite-sized pieces about the length of a finger.
Wash the oyster mushrooms and enoki mushrooms, cutting off the dirty roots with a knife, then rinse them under diluted salt water. Rinse again with clean water 2 to 3 more times and let them drain. For the oyster mushrooms, tear them into small pieces, while for the enoki mushrooms, just tear them small and cut them in half.
Gently wash the soft tofu with water. Then, use a knife to cut it into bite-sized cubes about the thickness of a finger.
-
Marinate and stir-fry the meat
Add the minced meat into a bowl with 1/2 teaspoon of seasoning, 1/3 teaspoon of pepper, then mix well and marinate for about 20 minutes for the meat to absorb the spices.
Place a pot on the stove, add 1 tablespoon of cooking oil. Wait for the oil to heat up, then add minced shallots and sauté until fragrant. After that, add the minced meat and stir-fry for about 3 minutes, until the meat is crumbly and slightly cooked.
-
Cooking the soup
Add 1 liter of water to the pot where the meat was sautéed earlier and bring to a boil. When the water boils, add all the mushrooms and season the pot with 2 tablespoons of seasoning, 1 tablespoon of salt, and stir well. Wait until the water boils again, then use a ladle to skim off the foam to make the soup clearer.
Then, add tofu and chives, stir well once more, and season the pot with 1 teaspoon of fish sauce, 1 teaspoon of ground pepper for a richer taste. Cook for another 1 – 2 minutes, then adjust the seasoning to taste before turning off the heat.
