- A piece of tofu should have an off-white color; if the tofu is yellow or slightly yellow, it contains gypsum. The yellower the tofu, the more gypsum it contains.
- You should buy tofu that feels light and soft when held. If it feels heavy, firm, slightly hard, and too square, it is advisable not to buy it because that tofu contains a lot of gypsum.
- Real, pure tofu has a distinctive aroma, while tofu containing gypsum will have a faint smell of lime or no smell at all.

- To ensure quality, you should choose to buy fresh whole pork instead of pre-ground meat.
- You should choose fresh meat that has a pink color, is tender, and has fat that is opaque white.

How to make Soft Tofu Soup with Chives and Minced Meat

Prepare the ingredients
Wash the chives you bought and let them drain. Then, cut the chives into pieces about the length of one finger.
Wash the shallots, peel them, and then slice them thinly.

Sauté the meat and tofu
Place a pot on the stove and add 2 spoons of cooking oil. When the oil is hot, add the shallots and sauté until fragrant over medium heat.
After the shallots are fragrant, add the minced meat and season with 1 tablespoon of fish sauce, 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of sugar, 1 teaspoon of pepper, and 1/4 cup of water (rice bowl) and stir well.
Sauté until the meat is firm for about 2 minutes, then add 2 blocks of soft tofu. Use a ladle to mash the tofu, then sauté until most of the water evaporates, about 5 minutes.


Cook the soup
Add about 800ml of water to the pot, and when the water boils, add the cleaned scallions to cook with the meat and tofu.
After the soup boils again, skim off the foam and adjust the seasoning to taste, then turn off the heat.
