Japanese sweet potatoes 1 kg (or purple sweet potatoes)

How to choose good sweet potatoes that are not fibrous

  • Buy sweet potatoes that are intact, not cracked or chipped. When holding the sweet potato, it should feel heavy, firm, and not bruised.
  • Choose sweet potatoes that are round or elongated, without indentations or hollows, and should not feel too hard when pressed lightly, as these tend to be less fibrous, more starchy, and taste very sweet.
  • Avoid choosing very small, long, or indented sweet potatoes as they will have more fibers.
  • Be cautious if you see sweet potatoes with black spots or blemishes, as this indicates they are spoiled.
  • Especially for boiled sweet potatoes, you should use boiled sweet potatoes to achieve a richer and tastier flavor.

  • Prepare the sweet potatoes

    After purchasing, wash the sweet potatoes to remove any dirt, then cut off both ends.

    Prepare a large pot, then stack the sweet potatoes neatly on top of each other.

    Next, add about 1 teaspoon of salt into the pot. Then, pour in enough water to just cover the sweet potatoes.

  • Boil the sweet potatoes

    Place the pot of sweet potatoes on the stove and cover it.

    First, boil the sweet potatoes on high heat until the water in the pot boils vigorously, with large bubbles.

    Next, reduce the heat, and when you see the water simmering, cover the pot again and boil the sweet potatoes for about 20 – 25 minutes until they are fully cooked.

    Finally, after boiling, when the skin of the sweet potatoes turns dark, use chopsticks to pick them out and check if they are fully cooked. If not, boil for an additional 5 – 7 minutes.

  • After boiling the sweet potatoes until cooked, let them cool, then place them in the refrigerator’s cool compartment to use within 2 – 3 days. When taking the sweet potatoes out of the refrigerator, you should leave them outside for about 5 – 10 minutes and then steam them lightly to make them warm.
  • However, the best time to enjoy sweet potatoes is when they are still hot, so you should only boil an amount that is just enough to eat. The longer sweet potatoes are stored, the more likely they are to dry out and lose their original flavor.
