How to choose fresh and delicious quail
- Choose quail with pale pink skin, slightly bright in color, with a natural aroma, no unpleasant odor or strange smell.
- Do not buy quail with darkened skin, visible blood spots, meat that is not elastic, slimy, or meat that is pale green or darkened.
How to Prepare Stir-fried Quail

Prepare the quail
Buy pre-prepared quail from the market, to eliminate the fishy smell of the quail, add a few slices of fresh ginger to a basin of diluted salt water and wash the quail for 5 minutes.
Then rinse it several times with water, drain, and cut into small bite-sized pieces.
Note: Make sure to clean the feathers of the quail to effectively eliminate the odor during preparation. You can use tweezers or a gas torch for effective cleaning.

Prepare other ingredients
Peel the garlic and shallots, and wash them thoroughly. Mince the garlic, cut the shallots in half, and then slice them thinly.
Peel the ginger, wash it, slice it thinly, and then julienne it. Wash the lemongrass, crush it, and cut it into sections.
Crush 2 chili peppers. Wash the green beans and cut them into short pieces about 2 finger lengths.
For the bamboo shoots, peel off the hard part and slice them thinly. Then blanch them briefly and rinse them several times with clean water.
How to properly prepare fresh bamboo shoots, removing toxins
- Boil the bamboo shoots in hot water, then soak them in rice washing water for 12 hours or overnight to help eliminate the bitter sap and keep the bamboo shoots white and crispy.
- Peel the bamboo shoots, soak them in lime water for about 30 minutes, then boil them 2 – 3 times until the water in the pot is clear, with no remaining cloudiness from the lime water, then you can proceed to cook with them.
- Boil the bamboo shoots with knotweed, when the bamboo shoots are cooked, drain the water, remove the knotweed leaves, rinse with cold water, and then rinse again with water before cooking.

Marinate the quail
Marinate the quail with 1 teaspoon of seasoning, 2 teaspoons of sugar, 3 teaspoons of fish sauce, 1 teaspoon of soy sauce, and 1 teaspoon of caramel sauce.
Then add the lemongrass, ginger, half of the minced garlic, half of the sliced shallots, and 2 chili peppers, mix well, and marinate for 30 minutes.
Note: If you do not like spicy food, you can omit the chili.

Stir-fried quail
Place a pan on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add the remaining garlic and shallots to sauté until fragrant.
Then add the marinated quail and stir-fry. When the meat is firm, pour in 300ml of coconut water and stir-fry on low heat. When the water boils, add the bamboo shoots and continue to stir-fry for about 10 minutes.
Add the cut green beans and stir-fry until they are just cooked. Adjust the seasoning to taste before turning off the heat.
