Boil the pork skin
Next, place a pot on the stove with 700ml of water over high heat. Once the water boils, reduce to medium heat, and then add the 1kg of prepared pork skin, and boil it for about 5 – 7 minutes, then remove and let it cool.
-
Dry pig skin
Once the ingredients are prepared, preheat the oven to 220 degrees Celsius for about 10 minutes.
At the same time, take the baking tray and place all the pig skin on it, then bake at a temperature of 130 degrees Celsius for 2 – 3 hours, until the pig skin is dry, then turn off the heat and transfer to a bowl.
Tip: If you do not have an oven, you can sun-dry the pig skin for 2 – 3 days. However, for quicker and more even drying, you should place the pig skin with the skin side facing up. -
Make pig skin seasoned with satay
Next, heat a pan with 700ml of cooking oil over medium heat. When the oil starts to bubble, gradually add the dried pig skin to fry for 5 – 7 minutes, until the pig skin is crispy and turns golden, then turn off the heat and transfer to a plate.
Then, heat another pan with 1 tablespoon of cooking oil (the oil used to fry the pig skin earlier) and add 1 teaspoon of minced garlic to sauté over medium heat until fragrant.
Next, add 4 tablespoons of satay chili, 2 teaspoons of fish sauce, and 2 teaspoons of sugar, stir well for 3 – 5 minutes, and adjust the seasoning to taste.
Finally, add all the fried pig skin in, stir well for about 5 – 7 minutes until the pig skin absorbs all the seasoning, then turn off the heat, transfer to a plate, and enjoy right away!
Tip:- Fry the pig skin when the oil is just bubbling, do not let the oil get too hot and smoke, as the pig skin will burn and not taste good.
- Avoid frying the pig skin unevenly; do not use too little oil!
