Ingredients for Durian Cheese Pizza For 4 people
Durian flesh 200 g Mozzarella cheese 25 g All-purpose flour 200 g Chicken egg 1 piece Fresh milk 70 ml Butter 15 g Fresh cream 20 ml Condensed milk 20 ml Instant yeast 1 teaspoon Sugar 20 g Salt 1/4 teaspoon
How to choose good durian
- You can buy pre-separated durian flesh or whole durians to separate at home.
- You should choose a durian that has a natural green color, large and even spikes, with a thick waist, as these usually have more segments than others.
- When smelling, there is a strong characteristic aroma, and you can observe that the durian stem is still fresh, green, and has sap at the tip of the stem.
How to quickly and simply open durian:
- First, you need to determine the line of the durian segment, wear gloves, and use a sharp knife to cut along the segment line.
- After cutting, use your hands to separate along the already cut line.

How to make Durian Cheese Pizza
-
Mix the pizza dough
Add eggs, fresh milk, sugar, and instant yeast into a bowl in turn, and beat until the mixture is dissolved. Add flour, salt, and butter to the mixture, and continue to mix until the dough is smooth. Let it rise for 2 hours.
Tip:
- You should use an egg beater to mix the dough, which helps the mixture to be evenly beaten, fluffier, and smoother, making the pizza tastier.
- When letting the dough rise, you should wrap it tightly with a plastic bag and let it rise at room temperature, as rising at high temperatures will reduce the flavor of the pizza crust.
-
Dough kneading and baking the crust
After the dough has risen, divide it into 4 parts, shape each part into a ball, and use a rolling pin to flatten the dough, creating a round shape for the crust.
Place the crust on a baking tray, use a fork or bamboo skewer to poke holes in the surface of the crust. Let the dough rest for about 10 minutes, then place it in the oven and bake for 5 minutes at 200 degrees Celsius.
Tip:
- Before rolling, use a little flour to dust the dough so it doesn’t stick while rolling.
- You should roll evenly, not making the dough too thick or too thin; otherwise, the pizza will not taste good.
- If you have time, you can put the dough in the refrigerator to rest for about 6 hours to make the pizza taste better.
-
Preparing durian
Separate the durian flesh from the seed, use a spoon to mash it, then add fresh cream and condensed milk to a bowl and mix well. After that, strain the mixture through a sieve until smooth.
-
Baking durian pizza
Spread the separated durian evenly over the surface of the freshly baked pizza crust, then add shredded Mozzarella cheese on top. Place the pizza in the oven and bake at 200 degrees Celsius for 10 minutes.
Tip: You can choose to buy cheese blocks and tear them into large shreds to put into the pizza, so when lifted, it will stretch into long and attractive strands.
-
Final Product
The cake taken out of the oven has a beautiful golden color, rich durian flavor combined with the creamy, chewy, delicious taste of cheese.
Tips for Successful Execution
- When kneading the dough for the crust, do not knead it too dry; it should be slightly moist so that when baking, the cake will not be dry and hard.
- Instead of using a rolling pin to shape the crust, which may cause the dough to dry out or stick, you should shape it directly with your hands, helping the cake to be crispier and evenly cooked.
- You should preheat the oven about 30 minutes before baking the cake so that it will be crispy and delicious longer.
