Pork belly 200 gr Dried shrimp 100 gr Carrot 2 pieces Cauliflower 150 gr (green or white cauliflower is fine) Bok choy 100 gr Okra 8 pieces Bitter melon 1 piece Dried chili 2 pieces Shallots 2 pieces Green onions 2 stalks Cooking oil 2 tablespoons Fish sauce 2 tablespoons Common spices a little (sugar/ salt/ ground pepper)

How to choose good quality dried shrimp

  • You should choose dried shrimp with a natural reddish-pink color resembling the color of brick glaze because they are shrimp that have been sun-dried, additionally, they have firm flesh and no strong odor.
  • Avoid choosing dried shrimp that has an unusual foul smell, has a light red or dark red color as they may be shrimp that have been stored for a long time or have been soaked in chemicals.

How to prepare Braised Pork with Dried Shrimp

  • Prepare the pork and dried shrimp

    Soak the pork belly in diluted salt water for about 5 minutes, then rinse with clean water and let it drain. Next, use a knife to cut the meat into small pieces about 1/2 the length of your finger.

    Soak the dried shrimp for about 10 minutes to clean, then rinse with water and let it drain.

  • Prepare the vegetables

    Wash the green onions and shallots, then chop them finely. Slice the dried chili thinly, soak the vegetables in salt water for about 5 minutes, then remove, rinse thoroughly, and let them drain.

    Put a pot of water on the stove to boil. Once the water is boiling, add all the vegetables and cook over medium heat for about 7 – 10 minutes, then turn off the heat and transfer the vegetables to a plate.

    Tip: For boiled vegetables to serve, you can choose various types of vegetables according to your preference!

  • Making kho quet with dried shrimp

    Place a pan on the stove, add 2 tablespoons of oil and heat over medium heat, when the oil is hot, add chopped shallots and fry until fragrant for about 2 minutes.

    When the shallots are golden and fragrant, add the pork belly and stir-fry for about 3-5 minutes until fully cooked and firm, then continue to add the dried shrimp and stir-fry for another 2 minutes over medium heat.

    Next, add the mixture including: 2 tablespoons of fish sauce, 4 tablespoons of sugar, and 150ml of water to the pan with the meat and bring to a boil over medium heat.

    When the meat sauce is thickened, adjust the seasoning according to your family’s taste, add chopped green onions and chilies, and sprinkle some ground pepper on top before turning off the heat. Scoop the kho quet onto a plate and it’s done.

  • Prepare the pork

    To eliminate the odor of the pork, soak it in diluted saltwater for about 5 – 7 minutes. Then, gently massage the meat with your hands. Continue to rinse the pork with cold water and place it in a basket to drain the water.

    Cut off any skin if present, and then cut the meat into bite-sized pieces.

    Shallots and green onion tops should be trimmed, washed with water, and then sliced thinly; use a knife to gently crush them. The remaining green onion leaves should be chopped finely, and the chili should be washed and left whole.

    Put a pan on the stove and add 1 tablespoon of cooking oil to the pan, when the oil is hot, add the meat and stir-fry on low heat.

    When the meat turns golden evenly, add smashed shallots and green onion tops, stir-fry until the shallots are golden and fragrant, then season with 5 tablespoons of fish sauce, 2 tablespoons of sugar, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of chili sauce, and 4 tablespoons of water.

    Lower the heat and stew the meat for about 3 – 5 minutes until the sauce thickens, then add chopped green onions and chili, turn off the heat and it’s done.
