How to Choose Delicious Crabs

  • You should choose medium-sized green crabs, as their meat will be firmer and tastier compared to other types like red crabs or flower crabs.
  • When holding a crab, flip it over and press gently on the crab’s chest; if it does not sink in, this means the crab has firm meat.
  • The best time to buy crabs with delicious, fatty meat is at the beginning and the end of the lunar month, so avoid purchasing in the middle of the lunar month as this is when crabs molt, and the meat will be mushy and not tasty.
  • Avoid buying crabs that have broken legs and claws and have a strange smell, as these are spoiled crabs that do not ensure quality.

How to Cook Boiled Crab

  • Prepare the crab

    After purchasing, cut off the rubber bands or ties from the crab. Then, use a brush to scrub and rinse the crab under a running tap to clean off the dirt, especially from the claws.

    Use a sharp object to immobilize the crab so it doesn’t move, then use a brush to clean it thoroughly.

    During the preparation process, you can wash the crab with white wine or crushed ginger mixed with water to eliminate the fishy smell of the crab.

    • When you buy the crab, you should start preparing it immediately while the crab is still alive to ensure the meat remains fresh and sweet.
    • When preparing, be careful not to remove the ties from the crab, as live crabs are very strong, and their claws can injure your hands.

    Place the pot on the stove, cover it, and turn the heat to high. Boil the crab for about 5 to 7 minutes, and when you see the crab shells turn red and are cooked evenly, turn off the heat and transfer the crab to a plate.

  • Place the crabs in a sealed nylon bag or airtight container and put them in the freezer; this way, you can keep them for a maximum of 3 days.
