Ingredients for Pandan Sticky Rice Serves 7 – 8 people

How to choose good sticky rice
- The good sticky rice grains should ensure they are large and uniform in size. The outside should be glossy, the grains should not be broken, not dusty, and have a yellow color. They should have a natural, distinctive aroma.
- The best type of sticky rice for making xôi (sticky rice dish) is the goose sticky rice, which has long, large grains resembling small goose eggs, with a milky white color and a light fragrance. When cooked, it expands just right, is very sticky, and soft. Particularly, the xôi remains sticky and delicious even after cooling, without becoming dry.
- If goose sticky rice is not available, you can use other good types of sticky rice such as glutinous rice, glutinous rice of various types, or other varieties as well. However, depending on the type of sticky rice, the flavor of xôi will differ.

How to make Pandan Leaf Sticky Rice

Blend pandan leaves
Add 70g of pandan leaves and 250ml of water into the blender and blend until smooth. Use a sieve to extract the juice.

Rinse and soak the sticky rice
Put 500g of sticky rice and 1/2 tablespoon of salt into a bowl, then add enough water to cover the rice and use your hands to rub it to make the rice clearer and softer.
After rubbing the rice, rinse it with water two more times.
To soak the rice, add 250ml of blended pandan leaf water, 500ml of diluted coconut milk, 1/2 tablespoon of salt, and 1 teaspoon of pandan flavor, then mix well and soak for 2 – 4 hours.

Make the salted sesame peanuts
Put 1 teaspoon of roasted salt into a mortar and pound it finely with a pestle.
Then, add 2 tablespoons of sesame and continue to pound finely, adding 100g of roasted peanuts and 2 tablespoons of sugar, then pound finely and mix well.

Cooking sticky rice
Steaming method
Take the soaked glutinous rice out and place it in a basket, allowing it to drain for 20 – 30 minutes.
Next, add 20g of pandan leaves to the steaming water, then add the glutinous rice to the steaming pot, add another 10g of pandan leaves to the rice, cover, and steam for 35 minutes.
Tip: To ensure the sticky rice is evenly cooked and tastier, remember to leave some space in the middle of the pot to allow steam to escape.
After 35 minutes, evenly spread 60ml of coconut milk over the sticky rice, mix well, and steam for another 5 minutes. Then, add 50 – 70g of sugar according to your taste and 150g of shredded coconut and mix well.
Sprinkle 1 tablespoon of boiling water over the sticky rice and cover, steaming for another 5 minutes to finish.
Finally, add 50g of shredded coconut and salted sesame beans to enjoy.
Rice cooker method
Take the soaked glutinous rice out and place it in a basket, shaking a few times to drain excess water.
Next, line the bottom of the rice cooker with the remaining 30g of pandan leaves, then add the glutinous rice, pressing it down with your hands.
To prepare the cooking liquid for the sticky rice, mix 250ml of coconut milk, 125ml of water, 1/2 teaspoon of salt, and 1/2 teaspoon of cooking oil in a bowl.
Then, pour the cooking liquid into the rice cooker and cover it, cooking until the rice cooker indicates it’s done.
When the rice cooker indicates that it’s done, switch it back on and cook again until it signals a second time, then remove the sticky rice.
Finally, sprinkle the salted sesame beans over the sticky rice to complete the dish.
