Cut the pineapple into round slices about 1.2 – 1.5cm thick.
Use a pineapple corer to remove all the hard core.
Dissolve 5 grams of alum in 700 ml of water, soak the pineapple in the alum water for 6 hours in the refrigerator.
Tip:- Do not use overly ripe pineapple; soft pineapple will make the jam less delicious.
- Soak the pineapple in alum before making the jam to increase its chewiness.

Dry the pineapple and soak it in sugar
After soaking the pineapple in alum, take it out and rinse it thoroughly with water.
Next, sun-dry the pineapple for about 3 hours until it is slightly wilted.
Once the pineapple is dried, proceed to soak it in sugar.
Evenly sprinkle 150 grams of sugar over 300 grams of pineapple, and marinate for 3-4 hours.

Cut the pineapple into round slices about 3 mm thick.

Slice the pineapple rings into strips, being careful to cut along the grain but not to mash the pineapple, do not chop it finely.
Wash the ginger, scrape the skin off, and cut it into strips as thin as possible.
