Prepare the pork
If you are using pork skin, then scrape off the hair to avoid discomfort while eating. The pork leg or pork belly should be treated similarly. Rinse everything thoroughly with salt and let it drain.
Cut the pork leg into pieces; the pork skin can be left whole or cut into 4 or 6 pieces depending on your preference.

Put the sliced meat into a bowl, then add the seasonings in order: 1 teaspoon of seasoning granules + 1 tablespoon of fish sauce + 1/3 of the finely chopped shallots + a little monosodium glutamate. Let the meat marinate for about 30 minutes.

Sauté a little chopped shallot with cooking oil in a pot. Then, add the meat and stir-fry until the meat is firm, then pour in boiling water to braise for about 30 minutes.

Sauté Mushrooms
You take a non-stick pan to sauté some sliced shallots with shiitake mushrooms and wood ear mushrooms that were cut in the previous step. Add a little seasoning while sautéing.

Completion
When the meat shows signs of tenderness, you add the mushrooms and wood ear mushrooms. Continue to boil the mixture for about 4 more minutes, then turn off the stove.
