Egg yolks 5 pieces Sugar 3/4 cup Butter 125 g (cut into small cubes) Lemons 3 pieces Cream cheese 225 g Heavy cream 1/2 cup Sugar 1/4 cup Vanilla extract 1/4 teaspoon Fresh strawberries 500 grams Strawberry jam 1/4 cup

How to make Strawberry Cake with Lemon Butter Sauce

  • Make the yellow lemon butter sauce

    First, we will make the yellow lemon butter sauce. Whisk the eggs and sugar in a pan, place it on the gas stove over medium heat. Add the butter and stir continuously until the butter melts.

    Grate the lemon zest and sprinkle it into the egg and sugar mixture, then squeeze the lemon juice (you can microwave the lemon in the microwave for 1 minute to make it easier to squeeze). Wait until the butter has completely melted, pour the lemon juice into the pan and stir well with a wooden spoon. After 15 minutes, the mixture will thicken into yellow lemon butter sauce.

    Wait for the sauce to cool, then pour it into a sealed glass jar, and store it in the refrigerator for about 7 to 10 days.

  • Make the cake crust

    After we have the lemon butter sauce, we will proceed to make the strawberry cake. First is the cake crust, we use crushed cookies so we don’t need to bake. Add the crushed cookie crumbs into a blender, add butter and sugar, and blend for a few minutes until the mixture sticks together like wet sand.

    We will use a rectangular cake mold with a removable base, but you can use any type of mold you like. Pour the cookie mixture into the mold and use your hands to press it tightly down to the bottom and sides of the mold.

  • Make lime avocado ice cream

    Add the cream cheese, sugar, and 3/4 cup of the lime avocado sauce made in the first step into the blender, pour in some vanilla extract for fragrance, and add a little heavy cream. Close the lid of the blender and blend until the cream mixture is well combined and smooth.

  • Decoration

    Pour the cream into the cake crust and use a spoon to spread the cream evenly. Next is the decoration step with strawberries; you can remove the stems and place the whole fruit on top of the cake, or cut into halves or slices according to your preference.

    Next, use a pastry brush to spread a layer of strawberry jam over the strawberries to create a shiny appearance and enhance the sweetness of the dish. Now, just place the cake in the refrigerator for a few hours to let the cream set, and you can cut the cake for the whole family to enjoy!

    The strawberry cake with lime avocado sauce has a lovely, luxurious appearance along with delicious layers of flavor. First is the layer of strawberries and tart, creamy lime avocado ice cream, followed by the soft, fluffy cake filled with the fragrant flavor of pomegranate, making users enjoy it more with every bite.

How to store lemon butter sauce strawberry cake

  • Let the cake cool completely, then use a sealed plastic bag or a covered box to store the cake.
  • Store at room temperature if it is cool (below 20 degrees Celsius) or in the refrigerator and use within 3 days.
