  • Fresh eggs usually have a thick shell, moderate size, and you should avoid large ones with thin shells.
  • It is best to buy eggs that have a fine powdery coating on the outside, with a hard shell, indicating they are fresh.
  • If you see chicken eggs with a smooth, shiny surface, they have been stored for a while and should not be chosen.
  • New eggs will not make any sound when shaken gently, while old eggs will produce a sound of movement inside.

    Place a pan on the stove, add 2 tablespoons of cooking oil to the pan, wait until the oil is hot, then add the shallots, stirring until the shallots turn golden brown and fragrant, then add the rice, stirring at medium heat for about 5 minutes until the rice grains are firm.
