Prepare the ingredients
– Buy pork belly from the market, rinse it well with water, and use a clean towel to dry the remaining water on the surface of the meat. If the piece of meat is too large, use a knife to cut it into manageable pieces and lightly score the skin surface so that when marinating with spices, it will be easier and more evenly absorbed.

Marinating the meat
– Prepare the marinade mixture:
+ The marinade mixture for the pork includes: 2 tablespoons of salt, 1 tablespoon of sugar, 1/2 tablespoon of five-spice powder, 1/2 tablespoon of white pepper, and 1/2 tablespoon of white wine. Put everything into a small bowl and mix well.
+ The marinade mixture for the pork skin includes: 1 tablespoon of salt and 2 tablespoons of apple cider vinegar. Put the mixture into a small bowl and mix well.
– Marinate the meat:
+ Place the pork in a tray for easy marinating; it is best to use plastic gloves and directly rub the marinade onto the meat.
+ The marinated pork is divided into 2 parts. One part is for the pork meat, and the other part is for the pork skin. Apply the prepared marinade mixture onto the pork meat (avoid applying it on the pork skin).
Note to ensure even and thorough marination because whether the meat is delicious or not depends on the marination process.
+ Unlike other pork dishes, the roasted pork must achieve a balance of tenderness and flavor distribution, and especially, the pork skin must be crispy and have a golden color.
+ Next, we use the vinegar and salt mixture to evenly coat the pork skin. Make sure to coat it evenly to ensure that the finished roasted pork will have a golden and crispy skin. Don’t rush to throw away the leftover marinade after marinating, as it will still be used to apply on the meat 2-3 more times during microwaving.
+ After marinating, place the meat in the refrigerator to marinate for an additional 5-6 hours. If possible, it is better to marinate the meat overnight to allow the marinade to penetrate evenly into each fiber of the meat, resulting in a more flavorful and aromatic roasted pork when microwaved.

Roasting meat in the microwave
– Once the meat has marinated for enough time, take the meat out and place it on the microwave tray (make sure the skin side is facing up). Cook at a temperature of 200 degrees Celsius for about 1 hour.
– During this time, every 20 minutes, take the meat out, dry it with a clean towel, and brush a layer of vinegar and salt on the skin, then put it back in the microwave to continue roasting. Do this about 3 times until the meat is just cooked.
