How to choose fresh, delicious chicken
- Good chickens usually have a firm body, narrow breasts, weighing from 1.5 – 2kg. You should not buy overly large chickens as the meat will be tough, chewy, and often from industrial chickens, resulting in dry and less tasty meat.
- It is advisable to buy chicken that is pink, fresh, and when touched lightly, the meat feels highly elastic, with some areas like the breast, wings, and back showing a deep yellow color.
- Avoid choosing chickens that smell bad, have strange odors, or have mushy meat, as they will not taste good and may be injected with water.

How to make Spicy Fried Chicken

Prepare the chicken
Wash the chicken thoroughly and cut it into bite-sized pieces.
Next, place the chicken in a bowl to drain.

Marinate the chicken
Add to the bowl of chicken 1 teaspoon of salt, 1 teaspoon of ground pepper, and 600ml of milk.
Then, marinate the meat for about 30 minutes. After marinating, take the chicken out.

Mix the chicken frying powder
Put about 300g of chicken frying powder into a large bowl, add 510ml of water and stir well.

Coat the chicken with powder
You place the marinated chicken into the powder mixture and mix so that the chicken is evenly coated.
Then, roll the chicken in dry chicken frying powder for another layer.
Tip: You can put the dry chicken frying powder and the marinated chicken in a large bag or big plastic container, then shake it really hard and evenly as well. -
Fry the chicken
You put the pan on the stove, add the coated chicken and fry for 10 minutes over medium heat.
Then, you take the chicken out and fry it again for 2 minutes in hot oil. When the chicken is golden brown, you take it out to drain the oil.
Tip: When frying the second time, you should increase the heat level and reduce the frying time. This will help increase the crispiness of the outer layer without burning it. -
