How to choose fresh and delicious ingredients
How to choose fresh shrimp
- You should choose fresh shrimp with a translucent shell, the tail typically folded together rather than spread out, the legs firmly attached to the body, and it should have a smell of seawater rather than a fishy odor.
- Fresh shrimp that have not been chemically treated have a slightly curved body, are firm but not unusually plump, the shell joints are flexible and not detached, the head of the shrimp should not fall off and should be firmly attached to the shrimp’s body.
- Avoid choosing shrimp that have dark patches or inconsistent colors, shrimp whose bodies have turned black, or shrimp whose legs are no longer firmly attached to the body as these are indications of spoiled shrimp.
- When lifting the shrimp, if it feels slimy, has a body curved into a circle, or the shell feels bumpy like it has sand, it should not be purchased.
How to choose delicious sweet corn
- You should choose corn cobs that have evenly sized kernels, about the size of a finger, as these will taste sweeter than those that are too large.
- The corn should be bright yellow or white, not too dark, and the stalk should be straight without bending. When holding the corn, it should feel firm, not soft, and make a “snap” sound when broken.
- Avoid choosing corn cobs that are bruised, have unusual white spots on the stalk, or show signs of insect damage. Do not buy corn that is dry and withered or rotten.
How to choose crunchy, delicious carrots
- You should choose carrots that are still firm, of medium size—not too big or too small, with a straight, elongated shape towards the tail, and feel solid when picked up.
- Choose carrots with bright orange skin, smooth surface, and fresh green tops tightly attached to the body.
- Avoid carrots with thick, large roots as these are older, with less fiber and nutrients. Steer clear of carrots with wilted, bruised tops, slimy texture, or dark spots.
How to choose delicious dried shiitake mushrooms
- It is advisable to buy dried shiitake mushrooms from reputable brands with clear origins, sold at reliable stores and establishments.
- Choose mushrooms of moderate size, not too large, with caps tightly curled down, not crushed, and a bright brownish-yellow color, with short stems attached to the caps and a distinct pure aroma.
- You should not choose shiitake mushrooms that are crushed, broken, have dark spots on the surface due to insect bites, or show white mold spots, as these mushrooms are spoiled and no longer fresh.
How to choose fresh and delicious green beans
- You should choose beans with bright green stems, firm and crunchy bodies, and seeds that are moderate in size—not too large or too small.
- Choose beans that are elongated, flat, and not overly bumpy.
- Avoid selecting long beans that have few hairs, are shiny, have clear segments, and show no signs of pests, as they may have been sprayed with many pesticides close to harvest time.
How to choose fresh, sweet onions
- You should choose bulbs with thin, smooth skins that are shiny, uniformly colored, with no dark spots or signs of pests, and that tightly hug the bulb inside.
- Select bulbs with many roots, of moderate size, that feel firm in hand and are dry to the touch.
- Avoid choosing bulbs with rough, porous skins that are easy to tear, as these are older and no longer fresh.
How to prepare Stir-fried shrimp with mixed vegetables
-
Prepare and marinate shrimp
Peel the shrimp, remove the head and tail, take out the black vein on the back, and soak them in diluted salt water for about 5 minutes, then rinse with clean water and drain.
Place the shrimp in a bowl along with 1 teaspoon of seasoning and 1 teaspoon of oyster sauce, mix well and marinate for 10 – 15 minutes to let the shrimp absorb the flavors.
-
Prepare other ingredients
Green beans should be stripped of their fibers, soaked in diluted salt water for 10 minutes, then rinsed with water and cut diagonally into bite-sized pieces.
For dried shiitake mushrooms, soak them in warm water for about 7 – 10 minutes or boil them in hot water for about 3 – 5 minutes to soften and remove dirt, then rinse with cold water, drain, and cut in half.
After purchasing young corn, strip off the silk, remove the husk, cut off the tough end, then soak it in diluted salt water for about 15 minutes, rinse thoroughly with water, and then slice the corn lengthwise in half.
Next, peel the carrot, wash it clean, and cut it into long bite-sized pieces. Shallots and garlic should be peeled and minced. For chili, green onions, and onions, peel, wash, and cut them into bite-sized pieces.
-
Blanching vegetables
Boil a pot of water and add 1 teaspoon of salt, then add the green beans, carrots, and baby corn to the pot to blanch for 1 – 2 minutes, then remove and drain.
-
Stir-frying shrimp with mixed vegetables
Heat a pan on a stove over medium heat, add 2 tablespoons of cooking oil to the pan, wait until the oil is hot and then add minced garlic and onion to sauté until fragrant.
Add the shrimp and shiitake mushrooms and stir-fry for about 1 minute until the shrimp begins to firm up. Then add the onion, green beans, carrots, and baby corn along with 1 teaspoon of salt to the pan and stir-fry for 5 – 7 minutes.
Next, add 1 teaspoon of fish sauce, 1 teaspoon of ground pepper, scallions, and chili to the pan, stir-fry for another 1 – 2 minutes to complete the dish.
