Prepare the ingredients
After purchasing, wash the meat thoroughly, and it is advisable to separate the lean part from the fatty part for easier weight calculation according to the recipe.
Peel the sugarcane, cut it into pieces about 10cm long, then divide the pieces of sugarcane evenly into 4 parts.

Grinding meat
Prepare a handheld meat grinder, add 400g of lean meat, 100g of fat, chopped dried squid, 1 tablespoon of fish sauce, 3g of pepper, a little dill, and Vietnamese coriander. Grind the mixture until smooth, then transfer to a bowl.

Cooking
After preparing the mixture, take enough meat to wrap around the sugarcane, you can shape it as you like. Continue doing this until all the meat is used up, then place it in a steamer for 10 minutes.
After steaming, transfer it to an air fryer to roast further. Before roasting, brush another layer of oil on the surface of the meat, and roast for about 15 minutes at 180 degrees. During the roasting process, you can take it out to check and brush another layer of annatto oil to make it visually appealing.
