How to Prepare Fish Cake Noodle Soup

  • Prepare the Ingredients

If using fish cake, slice the cake into thin pieces. If using fresh mackerel, cut the fish into thin slices or small pieces.

Peel and finely chop the shallots and garlic for frying.

Wash the coriander and chop it finely, set aside for topping the dish.

If using dry noodle, soak the noodle in cold water for about 30 minutes to soften it. If using fresh noodle, just wash it clean.

  • Cook the Broth

Place a 304 stainless steel pot on the stove, pour about 1.5 liters of water into the pot.

Add pork or chicken bones to the pot (if using the water from boiling mackerel, you can skip this step).

Bring the water to a boil, then reduce the heat to simmer the bones for about 30 minutes to 1 hour.

When the broth is clear, you can season it with 1 tablespoon of salt, 1 tablespoon of sugar, 2 tablespoons of fish sauce, 1 tablespoon of seasoning powder, and a bit of pepper.

Step 2 Cook the Broth for Fish Cake Noodle Soup
  • Sauté garlic and onion

Place a pan on the stove, add cooking oil, and heat it up.

When the oil is hot, add chopped shallots and garlic, sauté until fragrant.

Add mackerel fish cake to the pan, stir evenly for about 3-5 minutes until the fish cake is firm and slightly golden.

Then, add the sautéed mackerel fish cake into the pot, stir gently and cook for another 5 minutes to let the fish cake absorb the flavors.

Note:
  • Stainless steel pot 304 helps retain heat well, allowing the dish to be completed quickly without burning or sticking. If you use high-quality stainless steel pots, you will avoid dust accumulation or rust, ensuring hygiene for the dish.
  • Bánh canh should be cooked just right, not too long to avoid becoming mushy and losing the characteristic crispness of the dish.
  • To make the bánh canh more flavorful, you can add a little seasoning at the end or when eating.
