  • Choose small and tender pieces of meat; the fibers should be smooth, and when pressed, the meat should have good elasticity.
  • If you see small white spots on the meat that are easy to detach, it might be worms. You should also avoid small pieces of meat that are pre-cut, as they often contain worms.
  • If you buy pre-processed and packaged meat, remember to check the expiration date.

  • Prepare the ingredients

    To eliminate the unpleasant smell and dirt, after purchasing the beef, rinse it with a little salt, then wash it again with cold water and let it drain. Next, use a knife to slice the beef into thin pieces for easy eating.

    For the betel leaves, remove any yellow or wormy leaves (if any), then wash them thoroughly and cut them into small strips.

  • Marinate the beef

    After thoroughly preparing the ingredients, marinate the beef with 1/2 teaspoon of seasoning, 1/2 teaspoon of sugar, and half of the minced garlic and shallots. Mix well and let the beef absorb the spices for about 20 – 30 minutes.

    Put a pot on the stove, add 2 teaspoons of cooking oil and wait for it to heat up, then add the remaining minced garlic and shallots to sauté until fragrant.

    Next, add 1 liter of chicken broth to the pot where you sautéed the beef and bring it to a boil, then add the betel leaves. Add 1/2 teaspoon of seasoning and adjust the taste to your liking.

    Finally, add the sautéed beef back into the pot and continue cooking until the water boils again, then turn off the heat.

    Scoop the soup into a bowl, sprinkle some ground pepper on top, and garnish it nicely to complete the dish.
