- Do not choose intestines that have lumps like rice grains on the outside or have an unusual odor.

How to prepare Tri Ton Beef Porridge

Preparing the beef intestines
After purchasing green onions, wash them thoroughly, cut the tops into several pieces about 2 finger lengths long. For ginger, peel it and cut it into small strands.
Wash the chúc leaves thoroughly with water and then cut them into small strips. For red onions, peel, wash, and slice them thinly.
Put the intestines in a large bowl with 1 tablespoon of chúc juice and one tablespoon of sliced ginger, then use your hands to massage it well to remove all dirt from the intestines.
Next, use a knife to scrape both sides of the beef intestines clean, trimming off excess fat to completely remove impurities. After that, rinse the beef intestines under clean water 2-3 times and let them drain.
How to clean beef intestines without a fishy smell- Method 1: You can use salt and lemon to rub all over the beef intestines and then rinse them clean with water. Next, blanch the beef intestines in boiling water with 1 tablespoon of fish sauce and 1 tablespoon of vinegar, then remove and let cool. Thus, with these simple steps, we can eliminate the fishy smell of the beef intestines.

Place a pot on the stove, add 1 liter of water, and bring to a boil with 2 tablespoons of sliced ginger, 1 tablespoon of salt, and the prepared beef intestines. Cover and cook on high heat for about 20 minutes.

After that, add 1 tablespoon of salt, 1 spoon of sugar, 1 teaspoon of monosodium glutamate, and 1 tablespoon of fish sauce, then stir well. Next, add the chopped green onions and cook for another 3 minutes over medium heat.
At this point, remove the beef intestines to cool, then add the prepared beef blood into the pot, and continue to cook for 5 minutes over medium heat. Adjust the seasoning to taste and then turn off the heat.
Place a pan on the stove, add 20ml of cooking oil and heat over high heat. When the oil is hot, add the sliced shallots and stir until golden and fragrant, then turn off the heat and drain the oil.
For the beef intestines, cut into bite-sized pieces and place on a plate.
