You can buy pre-ground pork or purchase whole pieces of meat to chop or grind using a meat grinder at home.

  • Choose pieces of meat that have a bright pink color and high elasticity; when you press it with your hand, it should not leave an indentation.
  • Avoid buying meat that is leaking fluid, slimy, and has a foul smell.
  • Additionally, to suit the dish, you should choose meat from the shoulder part for more lean meat, which will taste better.

What is a starfruit? Where to buy black starfruit?

  • Starfruit has many different names such as: thanh quả, gián quả, cà ná… There are 2 main types: white starfruit (green starfruit) and black starfruit.
  • This type of fruit is often used to prepare stewed dishes or to make jams.
  • You should choose to buy black starfruits that are uniform in size, elongated at both ends, and have a natural white powdery coating on the outside, as they will taste better and have more nutrients than white starfruit.
  • When held, they should feel firm and hard when squeezed.
  • Avoid buying starfruits that are scratched, have lost their white powdery coating, or have wrinkled skin that is no longer smooth, as these fruits have been stored for a long time and will not taste good when eaten.
  • The starfruit season is around July and August each year. During this time, you can easily find starfruits at markets, supermarkets, or on e-commerce websites.

How to choose sticky rice for black starfruit sticky rice

For sticky rice, to make the dish more appealing and have a distinctive flavor, you can use Bắc sticky rice or yellow flower sticky rice. Even more special, you can use Nương sticky rice (this type of sticky rice is grown by ethnic minorities on terraced fields, not on regular paddy fields) to achieve the authentic flavor of Cao Bằng’s specialty.

How to prepare Black Starfruit Sticky Rice

  • Prepare starfruit

    Wash the starfruit thoroughly, place it in a pot, add enough water to cover it, and heat it to about 70 – 80 degrees (do not let it boil) then turn off the heat and peel the starfruit.

    Tip: Only heat the starfruit in warm water at about 70 – 80 degrees, if boiled, the starfruit will become hard and difficult to peel.

  • Stir-frying the filling

    Place a pan on the stove, add 2 tablespoons of cooking oil and sauté the sliced purple onion. When the purple onion is slightly golden, add the ground pork into the pan and stir well.

    After the meat is browned, add the black jujubes and mash them well so that the jujubes and meat blend together.

    Season with 1 tablespoon of fish sauce, 1.5 teaspoons of seasoning, and 1 teaspoon of pepper in the pan, stir well, and turn off the heat.

  • Mixing sticky rice with black plum

    Once the sticky rice is cooked, transfer it to a large bowl or basin, and mix the sticky rice and filling thoroughly. When the sticky rice and filling are well combined, it will have a light purple brown color.

    Note:

    • To make it easier for the sticky rice and filling to blend together, you should start mixing while the sticky rice is still hot.
    • After mixing the sticky rice, you can place it back into the steamer and cook for about 5 minutes to allow the grains to soften and become sweeter.
