  • Prepare buffalo meat

    After purchasing the buffalo meat, wash it clean, rub it with a little salt, then rinse with water thoroughly. Next, cut the buffalo meat into thin slices for easy eating and place it on a plate.

    First, add 1/3 cup of fermented rice and 1 cup of water into a multifunction blender and blend until smooth, then pour it into a separate bowl.

    Next, wash the tomatoes and cut them into wedges. Peel the carrots and cut them into bite-sized pieces.

    Peel the ginger, shallots, and garlic. For the ginger, crush and finely chop it; slice the shallots thinly, and crush the garlic.

    Then, cut off the tops of 4 stalks of lemongrass into thin slices, while leaving the lower small part intact.

  • Stir-fried tomatoes

    You put a pan on the stove and add about 2 tablespoons of cooking oil. After about 1 – 2 minutes, add all the sliced lemongrass, shallots, and smashed garlic and sauté them over medium heat for about 2 – 3 minutes until fragrant.

    When the ingredients are evenly golden, add 5 tablespoons of fermented rice that has been blended, stir well, and season with 2 teaspoons of monosodium glutamate, 3 teaspoons of seasoning powder, 1 tablespoon of sugar, and 2 tablespoons of fish sauce.

    Next, add all the tomatoes and stir well. After about 30 seconds to 1 minute, turn off the stove.

  • Cooking the fermented rice broth

    In this step, prepare a large pot of water (about 3 liters) and place it on the stove, then add all the sautéed tomatoes.

    Next, add the remaining blended fermented rice along with carrots and chili, then season with 1 teaspoon of seasoning powder.

    Simmer the fermented rice broth for about 10 – 15 minutes over medium heat until the water boils, then turn off the stove. At this point, ladle the hotpot broth into the hotpot, bring it to a boil, and then dip the beef in and enjoy.

    Tip: To make the dish more fragrant and slightly richer, you can add 4 – 5 tablespoons of coconut milk, and you can also adjust the seasoning to suit your taste!

      Then, add 1/2 of the minced garlic, mix well, and let the ribs rest for 30 minutes to absorb the seasoning.

      Peel the white radish and cut it into round slices, about half a finger thick. Cut off the stems of the straw mushrooms, wash them clean, and then cut the mushrooms in half.

      For the onion, peel it and cut it into wedges. For the chili, slice it thinly.

      Next, boil all 30g of shelled peanuts until soft for about 10 – 15 minutes, then place them in a separate bowl.

      Then, slice the lemongrass thinly, and crush and cut the stalks into pieces. Finally, peel and finely chop 4 cloves of garlic.

      At this step, prepare a pressure cooker and add 3 tablespoons of cooking oil along with the minced garlic from earlier and sauté until fragrant.

      Then, add all the marinated buffalo ribs and stir well. Sauté the buffalo meat for about 7 – 10 minutes until the meat is firm, then add the water from one coconut to cook with.

      Once the water boils again, add all the chopped lemongrass and 4 cups of water, cover the pressure cooker and proceed to stew for about 15 minutes.
