How to choose fresh and delicious pork ribs
- You should choose pork ribs that are light pink, springy to the touch, and have no foul smell for freshness.
- Select ribs with small and flat bones. This type of rib has more meat and fewer bones compared to large, round ribs.
- It is best to choose ribs with a lot of lean meat and little or no fat.
How to prepare Crab noodle soup

Prepare the pork ribs
Wash the ribs with diluted saltwater, then cut them into bite-sized pieces, about 2 – 3 finger widths.
Boil the ribs with boiling water along with 100g of dried shrimp and 3 roasted shallots.
When the ribs are cooked, take them out.
How to prepare pork ribs without a strong odor:
- After buying, wash the ribs with water, then rub the ribs with salt and white wine to remove excess blood, dirt, and the smell.
- Put the ribs in a pot of warm water, then use your hands to massage them thoroughly to clean out any remaining dirt inside the ribs.

Prepare other ingredients
Wash the tomatoes, drain them, then cut them into wedges.
Wash the banana leaves and dry them. Then, heat them over a flame to soften.
Put the shrimp paste in the softened banana leaves and wrap them up. Next, wrap aluminum foil around the banana leaves containing the shrimp paste and grill for about 5 minutes to concentrate the shrimp paste. Finally, transfer the shrimp paste to a bowl and mix with 2 cups of filtered water.

Make crab broth
Put the crab roe in a bowl and mix it with 1/2 tablespoon of rice vinegar.
Crush the crab meat and then mix it with 1.5 liters of water and strain it through a sieve.

Sauté tomatoes
Add 2 tablespoons of lard to a hot pan, when the lard is hot, add a little chopped shallots and sauté until fragrant.
Next, add the diced tomatoes and sauté with 1 teaspoon of sugar and 1 teaspoon of salt, then stir well.
Add the crab roe and sauté together for about 5 minutes, then turn off the heat.

Cook the broth
You use the broth pot after removing the ribs and add 1.5 liters of crab stock water, 2 cups of shrimp paste, and stir well.
When the crab meat rises to the surface, you scoop it out and squeeze out all the water, then place it in a bowl.
Next, you add the sautéed tomatoes along with the crab roe, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, 2 tablespoons of rice vinegar, 2 tablespoons of fish sauce, and 1/2 tablespoon of sugar, then stir well.
Cook until the water boils, then turn off the heat.

Completion
The ribs after being scooped out are seasoned with 1/2 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, and mixed well.
You add a little salt to the boiling water and then add the cleaned, chopped water spinach to blanch briefly, then scoop it out to drain.
So the crab noodle soup is now complete.
Immediately place the noodles in a bowl, then ladle the broth over it along with the marinated ribs, crab roe, and blanched vegetables on top. Enjoy with perilla leaves, lime, and chili according to your taste!
