How to choose fresh pork bones
- You should choose pork bones that have a good mix of bone, lean meat, and fat so that the broth is both sweet and deliciously rich.
- Choose pork bones that are bright light pink; when you press the lean meat and fat lightly, they should feel firm and not mushy.
- Avoid buying pork bones that look purplish, have an unusual fishy smell, as these are bones that have been stored for too long and are no longer fresh.
How to choose fresh blood
- Fresh, good blood will have a dark brown color on the outside and a deep red color on the inside when frozen. The blood should be soft and slightly wobbly, not hard.
- The blood you buy must not have a fishy smell, should be stored and covered cleanly, and should not have flies or insects on it.
- For safety, you can buy fresh blood at the market early in the morning and bring it home to boil.
How to choose fresh straw mushrooms
- Good straw mushrooms are still closed, round or cylindrical in shape, and feel slightly firm when pressed; this indicates they are fresh and just harvested.

How to make crab noodle hot pot

Making crab broth
Put the ground crab into a bowl containing 2 liters of water, stir well to dissolve the ground crab. You strain the ground crab through a sieve to extract all the broth. Then, you season the crab broth with 1 teaspoon of salt.
Next, you place the strained crab broth into a pot on the stove and bring it to a boil. When the broth boils, the crab mixture will float to the top, at which point you scoop the crab mixture out and set it aside in a bowl.
At this time, you marinate the scooped crab mixture with 1 teaspoon of seasoning, 1 teaspoon of annatto oil, 1 chicken egg, and a little chopped green onion.
Then you mix well, gently compress the crab mixture to stick together and steam it in a water bath for about 5 minutes.

Prepare and simmer the bone broth
Wash the pork bones thoroughly with water, then bring a pot of water to a boil and blanch the pork bones to clean them.
Next, rinse the blanched bones again and return them to the pot, simmering with 2 liters of water for 1 hour over medium heat.

Prepare other ingredients
Cut the fried tofu into small square pieces. Vietnamese pork sausage should be sliced into thin pieces for easy eating.
Wash the tomatoes, then cut them into wedges. Clean the green onions and cilantro, and chop them finely.
For the mint and basil, remove any wilted parts, then soak them in salt water along with bean sprouts, water spinach, and shredded banana flower, then rinse thoroughly and let drain.
Clean the straw mushrooms by removing any dirt from the stems, cut them in half if they are too large, and wash them well.
Peel the garlic and shallots, wash them, and chop them finely. Wash the chili peppers and slice them.
For the blood pudding, boil it with 2 liters of water mixed with a little salt over high heat for about 10 minutes. After that, remove it and soak it in a bowl of ice water.

Cooking crab soup hotpot
Place a pan on the stove, add 3 tablespoons of cooking oil and sauté 2/3 of the minced garlic and shallots until fragrant.
Once the garlic and shallots are golden and fragrant, add 3 teaspoons of annatto oil and 1 tablespoon of shrimp paste to the pan. Stir well, then add the tomatoes, stir-fry for about 30 seconds, and turn off the heat.
Next, in the pot of simmering bone broth, add the straw mushrooms and cook for about 5 minutes, then add the tomatoes, blood pudding, and fried tofu, cooking until the water boils.
When the hotpot broth is boiling, season with 1 tablespoon of seasoning powder, 1 tablespoon of sugar, 1 tablespoon of salt, and add the chopped green onion roots to finish.

Prepare shrimp paste for dipping
Place a pan on the stove, add 2 teaspoons of annatto oil and sauté the remaining minced shallots and garlic.
When the shallots and garlic are fragrant, add 2 tablespoons of shrimp paste, 2 tablespoons of water, 1/2 tablespoon of sugar, and 1/2 tablespoon of monosodium glutamate, and stir well. Then adjust the seasoning to taste and turn off the heat.
