- You should choose pork bones that have a good mix of bone, meat, and fat for a broth that is sweet, rich, and appealing.
- Choose pork bones that have a bright light pink color; when pressed lightly, the meat and fat should feel firm and not mushy.
- Do not buy pork bones that look purplish or have an unusual foul smell; these are bones that have been stored for too long and are no longer fresh.
How to choose fresh carrots
- Good carrots will have a bright orange color; choose those that are of moderate size because if they are too large, they are old carrots, and if they are too small (except for mini carrots), they are immature and lack distinctive flavor.
- Observe the carrot tops; the greener the tops, the fresher the carrots, indicating they were recently harvested; conversely, if the tops are wilted, the carrots are older and less sweet.
- Do not buy carrots that feel slightly soft when pressed; these are wilted carrots and will not taste good when cooked.

How to make Carrot Soup with Pork Bones

Prepare the ingredients
With 2 carrots you bought, peel, wash them clean and cut them into bite-sized pieces.
Next, wash the green onion and coriander, then chop them finely, and for 1 bulb of shallot, peel it and mince it.
Finally, to eliminate the unpleasant odor from 200g of pork bones, soak them in diluted salt water for about 15 minutes, then rinse with clean water, and chop into bite-sized pieces.
How to clean pork bones without odor:
- Method 1: After cutting the pork bones, use vinegar and a little minced ginger to rub on the bone pieces for about 5 minutes, then rinse with water.
- Method 2: Soak the pork bones in rice washing water for about 15 – 20 minutes, then rinse with water, this way the bones will no longer have an unpleasant smell.

Marinate the bones
Proceed to marinate the pork bones with minced shallots, 1 spoon of salt, 1 tablespoon of seasoning, 1 teaspoon of monosodium glutamate, and 1 teaspoon of ground pepper. Put everything into a bowl and mix well, then let it sit for about 30 minutes for the pork bones to absorb the seasoning.

Cook the soup
Turn on the stove at medium heat, add 1 teaspoon of cooking oil to the pot. When the oil is hot, add the marinated pork bones and sauté over medium heat for about 2 minutes until the bones are browned.
Next, add 1 liter of water to the pot, increase the heat to high, then cover and boil until the water boils. Once boiling, skim off the foam, lower the heat, and simmer the bones for about 20 minutes.
Then, add the carrots to the pot and continue to simmer for about 7 – 10 more minutes, then season to taste and ladle the soup into bowls.
Sprinkle chopped green onions, cilantro, and ground pepper for added appeal, and this dish is complete!
