How to Choose Fresh and Delicious Eels
- You should choose eels that have clear, sparkling eyes, with bright red gills inside, shiny colors, and firm flesh.
- Avoid choosing eels with cloudy eyes, dark red gills, and soft, mushy flesh when touched.
- Do not buy eels with an unusual rotten smell as they may have died long ago or gone bad.
- Gently press the flesh of the eel, especially near the belly, to easily identify which eels are fresh. Fresh eels have very firm flesh and good elasticity, while spoiled eels have softer flesh that can sometimes be mushy.
How to make Eel Porridge

Cook the porridge (wash the rice, cook the porridge)
Wash the sticky rice and regular rice together until clean, then put them into a pot. Place it on the stove and add water to boil until it reaches a rolling boil.
Once the water is boiling, reduce the heat, cover the pot, and simmer until the porridge grains expand evenly. Remember to use a ladle to stir well to prevent the rice from burning at the bottom. After the porridge is cooked, add 1/3 spoon of seasoning, stir well, and turn off the stove.
Tip: To make the porridge delicious, you should cook it in a rice to water ratio of 1:3. -
Prepare the eel
After purchasing the eel, clean it thoroughly, removing all the insides, and pour hot water over it. After pouring, wait for the slime to coagulate, then use a knife to scrape off the slime and wash it clean.
After washing the eel, cut it into bite-sized pieces.
Tip:- Be careful not to let the water boil too much as it will cause the skin to peel off and cook the outside of the eel.
- To ensure the eel is clean of slime, it is recommended to rinse it again with vinegar or lemon after scraping.
- Not only should you remove the slime, but the fishy smell of the eel also comes from residual secretions when you process the eel.

Prepare other ingredients
Garlic, ginger, shallots, and lemongrass after peeling and washing should be sliced thinly. Chili is cut into pieces about 1/4 finger length, and onion is sliced about 1/2 finger length. Coriander, green onions, and perilla should have the roots removed, washed, and chopped finely.

Stew the eel and finish
You put a pan on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add the minced garlic, lemongrass, and shallots and fry until golden and fragrant. Then add 100ml of water, 50g of oyster sauce, pepper, seasoning powder, chili powder, and chili sauce into the pan and stir the mixture well.
After that, add the cleaned eel and stir evenly. Add the sliced onion and chili gently to avoid breaking the fish meat. Cover the pan and cook on low heat for 40 – 45 minutes for the eel to absorb the flavors. Season the porridge to taste, and it’s done.

Final Product
You scoop the porridge into a bowl. Add the braised eel on top of the porridge, sprinkle some chopped green onions, cilantro, and perilla leaves on top to create a fragrant aroma. The porridge grains swell and are soft and smooth, paired with the spicy, flavorful braised eel, what could be better, right?
