How to choose good, rich peanuts

How to make Sticky Rice Balls with Peanut Filling

Prepare the peanut filling
First, spread the peanuts evenly on a tray and roast them for 18 minutes at 180 degrees Celsius. Then, put the peanuts in a blender and grind until smooth.
Next, add the ground peanuts to a bowl along with 30g of white sugar, a little salt, and 1.5 tablespoons of cooking oil, then mix well.

Mix the glutinous rice flour
Put 80g of glutinous rice flour and 60ml of warm water into a bowl, then use your hands to mix well until the dough forms a uniform mass.

Mix the cake dough
Next, take about 15g of the kneaded glutinous rice flour and boil it until cooked. After boiling, knead this cooked dough with the original dough to bind them together.
Finally, add another 20g of glutinous rice flour and 15ml of water, knead once more until the dough becomes smooth and elastic.

Wrap the peanut filling
Divide the dough into equal parts, about the size of a large finger, then roll them into balls.
Next, use your hands to flatten each dough ball, put 1 teaspoon of peanut filling in the middle, then pinch the edges of the dough closed and roll it into a ball again.
Boil a pot of water, add the dough balls and cook until they float to the surface, indicating they are done. Finally, remove them and place them in a bowl of cold water to cool.

Boil 1 liter of water, then add 25g of ginger and cook for 10 minutes.
Next, add 20g of brown sugar, 80g of white sugar, and 2 pandan leaves into the pot, then stir until the sugar dissolves to complete.
