How to choose fresh and delicious chicken breast
- Choose pieces of meat that are bright pink, firm, and not slimy, with no unpleasant smell.
- Avoid buying chicken breasts that have white stripes on the surface of the meat. This is a sign that the meat does not contain much protein and will easily become mushy when cooked, making it unappetizing.
- Additionally, you should buy chicken breasts at reputable supermarkets or grocery stores to ensure quality.

How to make Thai Coconut Chicken Soup – Tom Kha Gai

Prepare the ingredients
Lemongrass and galangal should be cut into pieces and smashed.
Tomatoes should be washed and cut into wedges.
For the brown reishi mushrooms, cut off the stems, separate them, and wash them clean.
Shallots should be peeled and chopped. Crush the chili. Chop the green onions and cilantro.

Prepare the chicken breast
When you buy chicken breast, you should soak it in diluted salt water for about 7 – 10 minutes, using your hands to gently massage the chicken to clean off any dirt.
Then rinse with clean water and cut into bite-sized pieces about 1/2 finger joint.
How to clean chicken breast without odor
- After rubbing with salt, you can use a mixture of alcohol and sliced ginger, pounding it and rub it all over the chicken breast again to help eliminate any odors and dirt. Rinse well and let it dry.
- Alternatively, you can add lemon to the water and soak the chicken breast for 15 – 20 minutes. Then take it out, rinse with cold water, and let it dry.

Cook the soup
Put a pot on the stove, add 500ml of chicken broth along with galangal, lemongrass, and shallots that have been prepared, then simmer over medium heat. Season with 2 teaspoons of palm sugar, 2 tablespoons of fish sauce, and 400ml of coconut milk, then mix well.
When the mixture starts to boil, add in the tomatoes, brown shiitake mushrooms, chicken breast, shredded kaffir lime leaves, and chili, then stir well. Cook over medium heat until the chicken is cooked and the tomatoes are soft.
Tip: To make the dish more visually appealing, when the tomatoes are soft and the skins start to separate, you should remove the tomato skins.

Completion
When the ingredients are cooked, sprinkle the chopped green onions and coriander on top. Squeeze the juice of 1 lime in, then stir well to finish.
