Chicken 1 bird (weighing about 1.5kg) Wormwood 100 gr Corn 1 ear Tofu 100 gr Duck eggs 5 eggs Chinese herbs 50 gr Accompanying vegetables 100 gr (water spinach/Chinese cabbage/sweet cabbage/ Malabar spinach…) Mushrooms 100 gr (shiitake mushrooms/enoki mushrooms/chicken thigh mushrooms) Seasoning 10 gr (fresh ginger/onion/salt/fish sauce/seasoning powder/sugar/msg)

How to make Chicken Hotpot with Wormwood

  • Prepare the ingredients

    After buying the chicken, wash it thoroughly and rub salt on the surface of the chicken to eliminate the fishy smell.

    Then, chop the chicken into small bite-sized pieces. Squeeze the chicken entrails with salt and rinse several times with water, then cut the entrails into small pieces.

    Trim the mushrooms by removing the stems, wash them clean, and let them drain for serving.

    Pick the wormwood and other greens you want to eat with, wash them with diluted salt water, and place them in a basket to drain well.

    Next, marinate the chicken with minced shallots, smashed lemongrass, 2 tablespoons of seasoning, and 1 tablespoon of monosodium glutamate, mixing well to ensure the chicken absorbs the spices, then let it rest for about 30 minutes.

    Cut the tofu into small bite-sized pieces and fry until golden brown on all sides, then place them on a plate lined with paper towels.

    Add chicken meat and fertilized duck eggs into the hotpot. When the water boils, add tofu, various mushrooms, and dip the accompanying vegetables and wormwood into the pot to enjoy.

Tips for successful execution:

  • Strain the bones to cook the hotpot broth; thinly slice the meat to cook quickly and be more tender when dipped in the hotpot.
  • Wormwood dipped in the hotpot should be taken out to eat immediately because if left too long, it will become bitter and hard to eat.
  • You can choose not to use Chinese herbs for the hotpot broth depending on your family’s taste.
  • It’s best to choose black chicken for a more nutritious and tender hotpot that pairs well with wormwood.
  • Pregnant women in their first three months and those with acute intestinal disorders or hepatitis should not eat too much wormwood.
