How to choose fresh chicken

- Do not buy if you see chickens that are lethargic, have ruffled feathers, runny beaks and noses, pale or bruised combs, bruised or swollen legs; these are sick chickens and are unsafe to use.
For processed chicken
- Freshly slaughtered and good quality chicken will have skin that looks bright, with a characteristic yellow or white color, thin skin, and feels smooth to the touch.
- Press on the piece of meat to feel its firmness and elasticity.
- Do not buy if you see chicken meat that is dull in color, soft and mushy when pressed, has bruises, is leaking liquid, or has a bad smell; this is chicken that has been kept too long and is not good.
What is bỗng rượu?
- Bỗng rượu, also known as vinegar bỗng or bỗng rượu, is a type of sour seasoning commonly used in Vietnamese cuisine, especially in Northern Vietnam. Bỗng rượu is a byproduct of the leftover rice after brewing alcohol that naturally ferments. When making alcohol, the leftover rice is called hèm.
- People use the leftover rice to brew repeatedly to produce second and third batches of alcohol. The remaining solids are strained to extract the liquid, which naturally becomes sour after a day or two; this is the bỗng rượu.

Prepare ingredients
To clean and eliminate the smell of chicken, you should massage the meat thoroughly with salt and then rinse it off. Next, chop the chicken into bite-sized pieces.
Peel the onions and garlic, then chop them finely. Wash the scallions and coriander, then cut them into sections. Remove the stems from the chilies and rinse them clean. Filter the rice wine to extract the juice.
How to clean chicken meat effectively and eliminate odor- Method 1: Use lemon juice or vinegar mixed with salt, then massage it onto the chicken for about 1 minute, then rinse with cold water. This way, the chicken will be clean and the odor will be eliminated.
- Method 2: Mix 1 crushed ginger with white wine, then rub it onto the chicken, letting it sit for about 30 minutes before rinsing it clean, draining, and preparing it for cooking.

Marinate the chicken
Put the chicken into a bowl and marinate it with shallots, minced garlic, 1 tablespoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of pepper. Mix well and let it sit for about 30 minutes for the chicken to absorb the spices.
