How to prepare Singapore Hainanese Chicken Rice

  • Prepare the ingredients

    Wash the ginger, peel it, and then slice it thinly.

    Wash the green onions and cut the onion tops and green parts separately.

    Take the whole chicken you bought, cut off the head, then rub salt on it to remove the chicken smell and rinse it with water and let it drain.

    Wash the rice and drain the water to let it dry.

    Wash the pandan leaves, bird’s eye chilies, bell peppers, cilantro, and cucumber thoroughly. Cut the chilies small, slice the cucumber to bite size, and chop the cilantro.

    Peel the shallots, wash them, and then smash them.

  • Boiled Chicken

    You boil 3 liters of water, then add 1 tablespoon of sliced ginger, 2 stalks of green onions, and 2 crushed shallots into the pot of boiling water. After that, you season with 2 teaspoons of seasoning powder, 1 teaspoon of salt, 1 teaspoon of sugar, and stir until the ingredients dissolve completely in the water.

    When the water is gently boiling, you add the chicken. When adding the chicken into the water, make sure to turn it so that the chicken is evenly cooked on both sides. Boil the chicken for 7 minutes until it is cooked, then turn off the heat, cover the pot, and let the chicken rest for 25 minutes before removing it and soaking it in ice water to make the skin crispy and the meat firm.

  • Make the Sauce and Cook the Rice

    You put 600g of well-washed rice into the rice cooker and add 500ml of chicken broth, 3 slices of ginger, 1 crushed shallot, and 2 pandan leaves together, then cook the rice.

    Next, add 2 slices of ginger, 2 cloves of garlic, 3 bird’s eye chilies, 1 long chili, 1/2 lime, 1/2 tablespoon of fish sauce, and 2 teaspoons of sugar into the blender and blend all the ingredients together until smooth. Now you have a delicious and flavorful dipping sauce.

    Finally, mix together 1.5 tablespoons of chicken broth, 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of fried garlic oil to make the sauce.

How to Prepare Hainanese Chicken Rice (recipe shared by a user)

  • Boil the chicken

    After purchasing the chicken, clean it and rinse it with water, then let it drain. Next, add 1.5 liters of water to a pot and place it on the stove. Add the chicken to the pot along with 4 slices of ginger, a little green onion, a little shallot, 2 stalks of lemongrass, and 3 teaspoons of salt.

    Tip:

    • If using frozen chicken, you should let it fully thaw before boiling.
    • It’s best to add the chicken to the pot while the water is still cold. Initially, you should use low heat until the water is hot, then switch to medium heat to boil the chicken faster.

    When you see the water gently boiling, reduce the heat to low and simmer for about 25 minutes for even cooking.

    During the boiling process, frequently use a spoon to skim off the foam on top and add 2 teaspoons of fish sauce to enhance the aroma.

    Next, prepare a tray of cold ice water. Mix 2 teaspoons of annatto oil with 1/2 teaspoon of turmeric powder in a bowl.

    After the chicken is boiled, use a brush to coat the chicken with the mixed concoction to achieve a better color. Then soak it in the cold water to make the skin crispy.

  • Cooking rice

    Place a pan on the stove, add 4 teaspoons of cooking oil. When the oil is hot, add 1 tablespoon of minced garlic and 1 tablespoon of minced shallots, stir well until the garlic turns golden. Next, add the rice and roast over low heat for about 10 minutes.

    Prepare a new bowl, then add 4 teaspoons of sugar, 5 teaspoons of fish sauce, and 1 tablespoon of chicken broth, then stir until the sugar completely dissolves.
