How to make Italian Chicken Soup

Add ingredients to the pot
Heat the pressure cooker with 1 teaspoon of olive oil over medium heat.
Add the sausage, stir briefly until the sausage is slightly browned, then mash the sausage, remove it to a plate and drain all the oil from the pot.
Add another teaspoon of olive oil to the pot, when the oil is hot, stir in the onion and garlic until the onion is light yellow.
Add the barley flour, stirring for about 1 minute.
Add the peas, chicken, carrots, parsley, and chicken broth to the pot (enough broth to cover the chicken).

Cook the soup
Seal the lid tightly, cook at the highest pressure for about 15 minutes. Reduce to medium pressure for about 9 minutes.

After the time is up, wait for the pressure to release completely, then open the lid and take the chicken out, cut or shred it into small pieces and return it to the pot, add spinach and spicy broth. Stir well and reheat before serving.
