  • Fresh and delicious pork is the type of shoulder or belly meat that has both lean and fatty parts, which will be tender and rich when cooked in soup, not dry and at the same time, does not create a greasy feeling.
  • In addition, observe the meat for a rosy color, looking fresh, not dull or with any unusual tiny spots on the surface.
  • Pressing it should feel resilient and firm, not slimy or too soft and mushy.
  • Fresh pork will have a faintly fishy smell characteristic; however, if you smell a strong and strange odor, you should not buy it as this may be a sign that the meat has been treated with chemicals.

  • Prepare the ingredients

    First, take the fresh green moringa leaves, discarding any wilted or damaged ones, and soak them in diluted salt water for about 3 – 5 minutes. After that, rinse with clean water and let them drain.

    For the shallots, peel them. Then, prepare a mortar, add the shallots and 1/2 teaspoon of ground pepper, and use a pestle to grind them finely.

  • Cooking Soup

    After preparing the ingredients, you place a pot on the stove with 1 tablespoon of cooking oil over medium heat. When the oil is slightly bubbling, add 100g of minced pork and the mixture of crushed shallots, stirring gently for 1 – 2 minutes.

    Then, add 1.5 liters of water, 1 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning powder, while increasing the heat to high and cooking for about 7 – 10 minutes.

    When the water boils, add all the moringa leaves that have been stripped and cook for 4 – 5 minutes, using a ladle to gently press down so the vegetables are submerged in the water.

    Once the water boils again, adjust the seasoning to taste, then turn off the heat and serve in a bowl to enjoy.
