How to choose fresh, sweet clams
- For clams with shells: Choose those that have intact shells, not broken, with hard shells, tightly closed, and of moderate size, not too small or too large.
- For shelled clams: It is best to choose those that are still hot or warm, white clams, plump, and with no foul smell.
- Clams have a distinctive aroma, so avoid choosing clams with unusual foul smells, signs of leaking water, or being soft and mushy.
How to choose fresh water spinach
- Choose a bunch of water spinach with stems only as thick as a rice noodle, the tips should be small and somewhat firm, avoid choosing those with unusually large stems.
- To buy fresh water spinach, you should go to the market in the morning. Additionally, you can also purchase quality water spinach with guaranteed origins at major supermarkets and stores.
- Do not choose water spinach that is bright green and shiny as it may have been sprayed with pesticides. You should also avoid stems that are large and dark in color, as these are older and will be very tough to eat.
- Limit choosing bunches of water spinach that are bruised, with many leaves having holes from pests, or that feel mushy and waterlogged.
How to make Clam Soup with Water Spinach

Prepare the ingredients
Buy clams that are already shelled, then to remove dirt, blanch them in boiling water for about 3 minutes and let them drain.
Pick the tender parts of the water spinach, cut them into pieces of about 2 – 2.5 finger lengths, then soak in dilute salt water for about 5 minutes, rinse and let drain.

Marinate the clams
Put the clams in a bowl with 1/2 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, and a bit of pepper, then mix well and marinate for about 10 minutes.

Cook the soup
Put a pot on the stove, add 1 tablespoon of cooking oil into the pot. Wait for the oil to heat up, then add 2 minced garlic cloves and sauté until fragrant, then add the clams and stir-fry for about 3 minutes until the clam meat is firm.
Pour 1 liter of water into the pot and bring it to a boil. Then, add the water spinach and cook for about 3 minutes. Season with 1 teaspoon of fish sauce, 2 teaspoons of sugar, 1 teaspoon of seasoning powder, and stir to dissolve the spices.
Wait for the water to boil vigorously, taste and adjust seasoning as needed, then sprinkle chopped green onions and coriander on top and turn off the heat.
