How to choose fresh and delicious ingredients
How to choose fresh and delicious pork belly
- Delicious pork belly has a balanced ratio of fat and meat, so when enjoying, you won’t feel greasy due to too much fat or too dry because of too much lean meat.
- You should choose meat with a thick outer skin, a fat layer of 1.5cm – 2cm, and the lean meat tightly attached to the fat. However, for the best taste in your dish, you should avoid buying meat with an outer skin that is too thick, as that indicates the pig has been raised for a long time, which won’t be tasty.
- Pay attention to the color of the pork; good pork belly has a dry outer skin, bright red or pink color. The meat after being cut should have a beautiful bright pink color, white-pink skin, and be soft. The fat interspersed with the meat should be bright white and firm.
- Fresh and delicious meat will have a distinctive smell; when buying pork, you should be careful; if the meat has a strange odor, it’s best to avoid purchasing it.
- The elasticity of pork belly is very good, so you should check it carefully before buying. Press your hand into the meat, and if the indentation returns to its original state quickly, that’s good quality pork.
How to choose fresh and delicious spare ribs
- Fresh spare ribs will have pink meat, elasticity, and no sour smell.
- You should choose flat ribs with small bones.
- Choose ribs with both lean and fatty meat so that when cooked, the ribs will be tender and not greasy.
How to Prepare Da Lat Quang Noodles
-
Preliminary Processing and Marinating Meat
Buy pork belly and spare ribs, wash them clean with diluted salt water, and then rinse with plain water. Then chop the spare ribs into bite-sized pieces.
Marinate the meat with the following spices: 1 tablespoon of minced shallots, 1 teaspoon of pepper, 1.5 teaspoons of seasoning powder, 1 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of cooking oil.
How to Prepare Spare Ribs to Eliminate Odor
- You should wash the spare ribs thoroughly before blanching them to limit dirt sticking to the ribs and making them difficult to clean when blanching.
- Blanching the ribs before cooking will help reduce the odor of the ribs and make the broth clearer.
How to Prepare Pork Belly to Reduce Odor
- When buying pork, you need to scrape off the hair on the skin, or you can ask the seller to help you scrape it off to save time.
- Soak the pork in diluted salt water for about 15 minutes. After soaking, rinse thoroughly with cold water about 3 – 4 times.
- You can also use a mixture of salt and vinegar to wash the pork, which helps eliminate the odor more effectively!

Stir-frying Dried Shrimp with Fermented Shrimp Paste
Heat the pot and add 3 tablespoons of cooking oil, then add 2 tablespoons of color cashew nuts and fry until fragrant until the nuts release their color, then remove them.
Next, add the minced shallots and sauté until fragrant. When the shallots turn yellow, add the dried shrimp and stir-fry for about 1 minute to make the shrimp firm. Then add the fermented shrimp paste and stir well for 30 seconds.
-
Stir-fry meat, ribs, and other ingredients
After you add the shrimp paste and stir-fry for 30 seconds, add the meat and ribs, stirring evenly for an additional 30 seconds. Season the dish with: 1 teaspoon of seasoning powder, 1 tablespoon of sugar, and a little monosodium glutamate.
When you see that the meat has absorbed the seasonings evenly, add the vegetables including: cassava, chayote, and chopped onions, and stir well. Simmer the ingredients for 10 minutes to make the meat tender and absorb the flavors.
-
Cook the broth
After simmering the meat and vegetables for 10 minutes, add about 1 liter of water to cook the broth. Be sure to regularly skim off the foam to make the dish tastier and more visually appealing.
Then, take out the pork belly that is being cooked and cut it into thin slices for serving.
