How to choose fresh beef tail
- To buy good beef tail, you should choose the meat from the tail that is bright red, with fat that is bright yellow, tendons that are white and firm when pressed. If the fat feels soft when pressed, you should not buy it.
- You should press the beef tail with your hand. If it is good beef tail, the meat should have good elasticity and no bad smell.
How to choose good pork bones
- Good pork bones usually have a fresh color, not pale and do not have any strange smell.
- The temperature of the bones when buying also affects their freshness; do not choose bones that are cold as they may have been refrigerated and are no longer fresh.
- Choose large marrow bones about 2 – 3 finger lengths, do not choose bones that are too big or too small.
Notes on ingredients for beef noodle soup
- You can use any part of beef you like for cooking, such as: tenderloin, brisket, sinew, chuck, rare beef,… in some regions, people also use beef tongue to create a chewy, delicious flavor.
- To make the noodle dish more delicious and authentic to Da Nang, you can use Da Nang beef sausage and minced sausage (similar to raw pork sausage) to accompany it.
- Beef sausage and minced sausage can be easily found in supermarkets, grocery stores, or specialty shops that sell ingredients, Da Nang specialties.
- Especially for people from Da Nang, they use small vermicelli to eat with beef noodle soup.
How to prepare Da Nang Beef Noodle Soup

Prepare the types of bones and meat
To eliminate the odor and clean the beef tail, after purchasing, scrape off all the hair, wash with diluted salt water, then rinse with white wine, and finally wash thoroughly with water.
Chop the beef tail at the joints into bite-sized pieces about 2 finger lengths.
To eliminate the odor and clean the pork bones and marrow bones, after purchasing, wash thoroughly with water, then blanch briefly in boiling water mixed with a little salt for about 2 minutes, and then remove and wash with cold water, allowing to drain.
How to clean beef tail without odor:
- Put the beef tail over charcoal (you can ask the seller to help with this step) then scrape off all the hair and charred parts, then wash thoroughly with salt water.
- To prevent the beef tail from smelling, wash it with white wine and use crushed ginger to rub the outside, then rinse with water.
How to clean pork bones without odor:
- Another useful tip is to add a little white wine to the water used for blanching the pork bones. The wine is very effective at eliminating odors.
- You can also use lemon, vinegar, salt, or ginger to rub on the pork bones and let it sit for about 5 – 10 minutes before rinsing with water.

Prepare other ingredients
Ginger is washed clean, then roasted on the stove for fragrance.
Lemongrass is washed clean, smashed and kept whole, then tied into a bundle. Pineapple is peeled, eyes removed, and cut in half.
Tip on how to quickly peel pineapple without cutting off the eyes
- First, cut the pineapple lengthwise from top to bottom into 4 equal parts.
- Continue to cut along the length of the pineapple slices, stopping at the end of the fruit and cutting firmly to remove the flesh while discarding the skin.
- Avoid cutting too close to the skin to prevent leaving any eyes of the pineapple. Finally, cut it into smaller pieces as needed.

Simmering the bones
Place a pot on the stove, turn on medium heat, add the pork bones, beef tail, roasted ginger, the bundle of lemongrass, and 2 pieces of pineapple into the pot along with 10 liters of water and simmer for about 1 hour to extract the sweet broth.
Quick tip:- If the broth has foam, skim it off to keep the broth clear.
- Adding pineapple to the pot with the pork bones and beef tail helps the meat soften quickly and makes the broth clearer and sweeter.

Cook beef noodles
After simmering the bones, you season with 16 tablespoons of fish sauce, 2 tablespoons of honey, and stir well to dissolve the seasonings.
Then, add sliced pork sausage and 3 tablespoons of annatto oil to the pot, and cook for another 5 minutes.
Next, add a little fermented shrimp paste to enhance the flavor of the dish, adjust the seasonings to suit your family’s taste, and then turn off the heat.

Final product
