Pork bones 300 gr Pumpkin 1 piece (about 300gr) Cilantro 2 sprigs (Vietnamese coriander) Common seasonings a little (ground pepper/ salt/ monosodium glutamate/ seasoning powder)

  • Choose pork bones that have a mix of meat and fat so that they will taste sweeter and richer when eaten!
  • Pick pork bones that are light pink in color, with the meat and fat having a certain firmness and not being mushy.
  • Do not buy bones that feel too sticky to the touch; this may indicate that the pork bones have been stored for too long and are no longer fresh.

How to choose fresh pumpkin

  • Choose pumpkins with stems that are about 2 finger lengths long; these will typically last longer after purchase.
  • Pick pumpkins that feel solid in your hand, firm and not soft or wilted.
  • Do not buy pumpkins that show signs of bruising, decay, or even leaking a slimy liquid; those pumpkins are spoiled.

Ingredients for pumpkin soup with pork bones

How to prepare Pumpkin Soup with Bones

  • Prepare and marinate the bones

    With 300g of pork bones after purchasing, to eliminate the smell, wash them and soak in diluted salt water for 15 minutes. After that, take the pork bones out, rinse with clean water, and let them drain.

    Put the pork bones into a bowl along with 1 teaspoon of ground pepper, 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning powder. Mix well and let marinate for about 30 minutes for the bones to absorb the spices.

  • Prepare the other ingredients

    With 1 pumpkin (about 300g), use a knife to peel it, wash it clean, and cut it into pieces about 1 finger thick.

    Next, for 2 sprigs of coriander, just wash them clean with water and chop them finely.

    Tip: To keep the pumpkin sweet and creamy after cooking, do not cut them too thin!

  • Cooking soup

    After the pork bones have absorbed the seasoning, you put everything into the pot along with 1 liter of water, then place it on the stove and bring it to a boil.

    Once boiling, skim off the foam, reduce the heat, add 1 tablespoon of seasoning, cover the pot, and simmer for about 15 minutes until the pork bones are cooked and the soup becomes sweet.

    After 15 minutes, add all the pumpkin, turn the heat to medium, and cook for another 10 minutes until the pumpkin is soft, then taste and adjust the seasoning as needed, turn off the heat, and ladle the soup into a bowl.

    Sprinkle chopped coriander and ground pepper on top to make the soup more aromatic, and then get ready to enjoy!

    Tip: Depending on your preference, you can sauté the bones first before adding water to cook.
