How to choose fresh and delicious lotus seeds

  • For fresh lotus seeds, you should choose seeds that have just been harvested with an off-white or deep yellow color, looking plump, fresh, and vibrant.
  • For lotus seeds that have not been shelled, you should also choose those that are still fresh and green. Buying this type of lotus seed will allow you to experience the soft, delicious, and milky sweetness of the seeds when cooked. Particularly, you can take the lotus heart out, brew it into tea, and drink it to help cool down and lower blood pressure effectively.
  • For dried lotus seeds, you should buy seeds that are opaque white, small, and uniform, feeling dry to the touch and usually without the lotus heart inside.

  • Prepare the ingredients

    Shallots should be washed, peeled, and sliced thinly or crushed using a knife.

    Spring onion (nén) should be rubbed with both hands to clean the skin under running water, then crushed.

    Chili peppers should be washed clean, half cut into slices to marinate the clams, and the other half left whole to put into the porridge for those who like it spicy.

    Bean sprouts should be washed clean with water and drained for serving.

    You can use live clams or buy pre-prepared clams from TasteVN or the supermarket, wash them thoroughly with water, remove any remaining shell if present, and let them drain.

    Next, you marinate the clams with 1/2 teaspoon of salt, 1 teaspoon of fish sauce, 1 teaspoon of seasoning powder, 1/2 teaspoon of chili powder, and 1/2 sliced chili into a bowl, mix well and let it marinate for about 10 minutes until the clams absorb the spices evenly.

  • Cook lotus seed porridge

    First, you add 1 cup of cold rice, 1/2 cup of lotus seeds, 1/2 teaspoon of salt, and 1 liter of cold water into a pot.

    Stir well and cook over medium heat until the water boils, then observe the consistency of the porridge in the pot, whether it is thick or thin to adjust the cooking time and you can add more water to dilute it according to your family’s preference.

    Then, cook over medium heat for about 15 minutes until the rice grains puff up as desired and the lotus seeds are fragrant, soft, and creamy, you can turn off the heat.

    Tip:

    • You can soak or boil the lotus seeds before cooking the porridge to help shorten the cooking time.
    • When adding lotus seeds, remember to remove the lotus seed heart (lotus embryo) as it can make the porridge bitter.

    Place a frying pan on the stove, add frying pan with 1 tablespoon of cooking oil, all the sliced shallots and smashed garlic. Sauté over medium heat for about 1 minute until the shallots are fragrant and slightly golden, then pour into the marinated long shell bowl and mix well.

    Stir-fry the mixture over medium heat for about 5 minutes until the long shell meat is cooked through, then turn off the heat and pour it into the lotus seed porridge pot, leaving a few shells for decoration.

    Next, season with 1 teaspoon of salt, 1 teaspoon of seasoning powder, and 1 teaspoon of fish sauce, stirring well. Remember to taste and adjust the seasoning to suit your family’s palate.

    Finally, add bean sprouts and ladle the porridge into a bowl, sprinkle with a bit of ground pepper, a few sautéed shells, and some chopped herbs on top if you like, then you can enjoy it!

    Tip: To prevent the shell meat from being tough, you should stir-fry it just until the meat is cooked through before turning off the heat!
