How to make Shrimp and Meat Noodle Soup

Prepare the ingredients
For the shrimp, remove the heads and set them aside, discard the shells and the shrimp veins, then wash thoroughly and drain. After that, chop the peeled shrimp finely.
The accompanying vegetables include bean sprouts, Vietnamese coriander, and basil, which should be washed and drained. Wash the tomatoes and cut them into wedges.
Peel and finely chop the shallots. Wash the green onions and chop them. Remove the stems from the chili peppers and chop them finely.
How to quickly and cleanly remove shrimp veins
- Method 1: Hold the shrimp’s body firmly with one hand, gently squeeze the shrimp’s head with the other hand, and slowly pull it out. The shrimp vein will come out along with it.
- Method 2: After removing the shrimp’s head, use a toothpick to pry the shrimp vein out, gently pull it out to avoid breaking it.

Frying the tofu
Wash the tofu through one rinse of water, drain, and cut into bite-sized pieces.
Place a pan on the stove, add 4 tablespoons of cooking oil into the pan, and carefully fry all sides of the tofu until golden.
Tip: Depending on your preference, you can fry the tofu until crispy golden or just lightly fry it! -
Mixing the filling
Add the minced shrimp into a bowl along with 300g of ground pork, crack in 1 egg, all the chopped shallots, 1 teaspoon of pepper, 1 teaspoon of salt, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate. Mix well and let the mixture marinate for 30 minutes.

Cooking the broth
First, add 1/2 tablespoon of oil used to fry the tofu into the pan and sauté the tomatoes for about 2 minutes.
Next, place the cleaned shrimp heads into the pot along with 2 liters of water and bring to a boil. When the water boils, skim off the foam and add the sautéed tomatoes.
Once the water boils again, drop in each ball of the marinated shrimp and pork filling from above, and cook for an additional 10 minutes until the filling is cooked through.
After 10 minutes, add the fried tofu along with 1 tablespoon of shrimp paste into the pot. Adjust the seasoning to taste, add chopped green onions, and turn off the heat.

Take a serving of noodles and place it in a bowl. Add bean sprouts, Vietnamese coriander, basil, and sliced chili, then ladle the broth along with the shrimp and pork filling on top and enjoy.
