Prepare the snails
Buy snails to eliminate the odor and clean them, removing the snail’s intestines. Rub with salt 2-3 times to clean off the slime and then rinse with water.
Boil 1 pot of water and briefly blanch the snails for about 2 minutes to thoroughly clean off the slime.

Prepare the other ingredients
Fresh turmeric should be washed and smashed, divide the turmeric into 2 parts. One part is for boiling bananas, while the other part for marinating snails should be chopped finely.
Peel the green bananas, cut them into thick slices about the width of a finger. Soak them in diluted vinegar water to remove the sap for 10 minutes, then rinse with clean water.
After preparation, you boil the bananas with the smashed turmeric for 5 minutes. Remove and let cool.
Cut the tofu into small square pieces and fry until golden brown on all sides.
Wash the pepper leaves and perilla leaves thoroughly, then cut into small pieces. Peel the shallots and chop finely.
For the fermented rice, you sieve to discard the solids and take the liquid.

Marinate the snails
Put the snails in a bowl and marinate with 1/2 of the minced shallots, 2 teaspoons of pepper, minced turmeric, 1 teaspoon of monosodium glutamate, 2 teaspoons of sugar, 3 teaspoons of seasoning powder, and 1 teaspoon of fish sauce.
Mix well and marinate for about 15 minutes.

Add 3 tablespoons of cooking oil to the pot and heat it up, then add the remaining shallots and sauté until fragrant.
Next, add all the marinated snails and stir-fry quickly with 3 tablespoons of filtered fermented rice, stir-fry over medium heat until the sauce thickens.
Then add 500ml of water, simmer for 15 minutes, then add boiled bananas and fried tofu, continue cooking for another 5 minutes.
