How to Choose Fresh Snails

  • You can buy live snails to boil and extract the meat, ensuring safety and freshness. If buying live snails, you should pay attention to the buying tips we suggest below.
  • Observe the water basin; if you see a snail with its mouth open and it closes when you touch it, that indicates it’s a healthy snail.
  • The shell of the snail should be shiny black, without scratches or lines. If these lines appear, it indicates that the snail has been sick during its life, and the meat will be less fresh.
  • Fat snails are usually those with the shell’s mantle bulging outwards, while those with the mantle deeply retracted are often weak and thin.
  • The snail’s burial area should not have tiny holes, as this is a sign that the snail is lacking calcium or is being attacked by parasites.
  • To save time, you can buy pre-boiled snails with the meat already extracted; just make sure to buy from reputable, quality places with packaging, product origins, production dates, and expiration dates.

How to Choose Good Tofu, Free from Gypsum

  • It is advisable to buy tofu pieces that are cream-colored and feel light when held.
  • Tofu made from soybeans feels soft and smooth when touched. It has a distinctive fragrant smell.
  • Do not buy hard tofu that feels heavy when lifted because this indicates it contains gypsum.
  • Tofu that has undergone chemical processing will be pure white; it should absolutely not be chosen.

How to choose fresh green bananas

  • For this dish, you should choose green bananas (unripe bananas) of any kind, depending on your preference.
  • Good green bananas will have a bright green peel, smooth and firm, with a uniform curve, approximately the size of two fingers, and will feel very firm when pressed.
  • Choose bananas that still have sap at the stem end, with fresh stems, as they are freshly cut bananas, very fresh and delicious.
  • Do not buy ripe bananas for this dish, as they will become very soft when cooked, not tasty, and lose their characteristic nutty flavor.
  • Avoid buying bananas with darkened or dried-out stems, or with wrinkled peels and pale green color, as they are old bananas or underdeveloped bananas.

How to prepare Snail cooked with banana and tofu

  • Prepare the snails

    Buy snails to eliminate the odor and clean them, removing the snail’s intestines. Rub with salt 2-3 times to clean off the slime and then rinse with water.

    Boil 1 pot of water and briefly blanch the snails for about 2 minutes to thoroughly clean off the slime.

  • Prepare the other ingredients

    Fresh turmeric should be washed and smashed, divide the turmeric into 2 parts. One part is for boiling bananas, while the other part for marinating snails should be chopped finely.

    Peel the green bananas, cut them into thick slices about the width of a finger. Soak them in diluted vinegar water to remove the sap for 10 minutes, then rinse with clean water.

    After preparation, you boil the bananas with the smashed turmeric for 5 minutes. Remove and let cool.

    Cut the tofu into small square pieces and fry until golden brown on all sides.

    Wash the pepper leaves and perilla leaves thoroughly, then cut into small pieces. Peel the shallots and chop finely.

    For the fermented rice, you sieve to discard the solids and take the liquid.

    Mix 2 tablespoons of cornstarch with 100ml of filtered water in a bowl and stir well.

  • Marinate the snails

    Put the snails in a bowl and marinate with 1/2 of the minced shallots, 2 teaspoons of pepper, minced turmeric, 1 teaspoon of monosodium glutamate, 2 teaspoons of sugar, 3 teaspoons of seasoning powder, and 1 teaspoon of fish sauce.

    Mix well and marinate for about 15 minutes.

    Add 3 tablespoons of cooking oil to the pot and heat it up, then add the remaining shallots and sauté until fragrant.

    Next, add all the marinated snails and stir-fry quickly with 3 tablespoons of filtered fermented rice, stir-fry over medium heat until the sauce thickens.

    Then add 500ml of water, simmer for 15 minutes, then add boiled bananas and fried tofu, continue cooking for another 5 minutes.

    Season to taste according to each household’s preference, add the diluted cornstarch and wait for the water to boil again. When the water has a slightly thick consistency, add all the shredded perilla leaves and laksa leaves into the pot, turn off the heat to complete the dish.
