Ingredients for Beef Rib Pho Serves 4 people

Beef ribs 1 kg Pho noodles 1 kg Pho cooking spices 1 pack (2 liters of water) Large onion 1 bulb Ginger 2 bulbs Red apple 50 gr Green onions 5 stalks Cilantro 3 stalks Accompanying herbs A little (basil/ sawtooth herb/ bean sprouts) Common spices A little (sugar/ seasoning powder/ salt/ pepper/ monosodium glutamate)

How to choose fresh and delicious beef ribs

  • You should choose large, whole beef ribs that have not been chopped into smaller pieces, selecting a large rib so that when simmered, the broth will be tastier and sweeter.
  • Fresh beef ribs are those that have a natural pink color, the meat is elastic, and the fat is firm with a slightly translucent white color, not cloudy yellow.
  • You should choose ribs that have a lot of meat, little fat, or no fat to avoid a greasy feeling when eating.
  • Do not choose ribs that have a slightly slimy, sticky surface and a spoiled smell.

How to Make Beef Rib Pho

  • Prepare the Beef Ribs

    When buying beef ribs, soak the ribs in salted water for 3 – 5 minutes, then rinse with clean water to help the ribs soften faster when cooked and to eliminate any unpleasant smell.

    Cut the ribs into bite-sized pieces, about 2 – 3 finger joints depending on your preference!

    • Method 1: Use 1 piece of ginger, roast it until the skin is charred, then peel and pound it finely, and rub the ginger directly onto the surface of the beef evenly. The aroma of ginger will enhance the flavor of the beef, eliminating any unpleasant smell.
    • Method 2: Soak the beef ribs in a bowl of rice wine for 10 – 15 minutes, then rinse the meat with clean water. You can cook it directly like this, which will also make the meat taste better.

    Place the onion and ginger (with skin on) on the stove and roast them lightly. Roast until the skins are slightly charred, being careful not to burn the onion and ginger too much.

    After roasting, peel the onion and ginger. For the onion, make two light cuts at the bottom, keeping the ginger whole.

    Pick out any damaged leaves from the green onions and coriander, wash them clean, and let them drain. Chop the green onions and coriander into small pieces.

  • Cook the broth

    Put the packet of various spices for making pho into a pan and stir evenly until aromatic, then turn off the heat.

    Use a small clean cloth bag or a mesh bag to put the spices in. Gather the edges of the bag to seal the ingredients and then tie it closed with a piece of string.

    Cook about 2 liters of water in a pot, add 1 onion, 2 pieces of ginger, 50g of red apple, and the spice bag to make the broth.

    When the water starts to boil, add the beef ribs to simmer. If you see bubbles forming in the broth, use a ladle to skim off the foam until it is gone.

    Reduce the heat and simmer for 1.5 – 2 hours. When the beef is tender, season the broth with 2 teaspoons of salt, 2 teaspoons of monosodium glutamate, 4 tablespoons of seasoning powder, a bit of sugar, and pepper.

    Tip:
    • You can save time by simmering the broth with a pressure cooker.
    • To keep the beef ribs from turning red, do not wait for the water to boil too much before adding the ribs.
    • While cooking, continuously skim the foam to keep the broth clear and tastier!

    First, you blanch the pho noodles in boiling water to make them fluffy and soft.

    Next, you arrange the pho noodles in a bowl, add a little chopped green onion and cilantro, then place a few pieces of beef ribs on top and ladle the broth over the noodles.

    When eating, you can add cilantro, basil, and bean sprouts to enhance the flavor. Furthermore, to stimulate your taste buds, add a bit of chili and squeeze some lime!
